Does anyone know what will happen to the plane until January?
Will it sit in Athens or will it go in to service in disguise?
I see TK are getting their A321NEOs into service in 48 hours after delivery these days which is pretty fast. Then they do have grounded 7M8s to make up for.

There is no need for training flights. There is no difference (except of the engines) with the other a320s. The only reason it will not fly is because they wait the second a320neo (which will arrive mid January) to unveil the company logo etc.

Why would they need 2 airplanes to unveil the new logo?

There has been a delay with the neo service. According to routesonine:
Aegean Airlines in recent schedule update moved Airbus A320neo service debut, now scheduled until early-February 2020, instead of previously scheduled late-January 2020. Latest A320neo operations for Feb/Mar 2020 as follows.
Athens – London Gatwick 04FEB20 – 27MAR20 3 weekly
Athens – London Heathrow 02FEB20 – 28MAR20 A3608/609 1 daily
Athens – Munich 01MAR20 – 28MAR20 13 weekly
Olympic Air service operated by Aegean A320neo:

I've just seen this interesting report:

It states that the A20N will have a total of 166 seats which is lower than the 180 which now seems to be standard - although both LH and BA are having issues with the density and weight distribution.
It breaks it down further and states there will be 12 business class seats and 154 in economy. I wonder if we're going to see a properly differentiated business class product? The other info in the article has been well recorded elsewhere but I haven't seen anything about seating yet.
