Lost Valley Cortese 2011
Upper Goulburn, Victoria
Lost Valley Winery is one of Australia's most respected cool-climate boutique wineries, nestled in Victoria's high country, just below the snowline at 430 metres. Cortese is a rare northern-Italian varietal used to make the legendary Gavi di Gavi wine from that area. This Cortese features a similar botanical lift on the nose to Sauvignon Blanc, with pristine passionfruit and herbal complexity. The palate is quite textural and unctuous like Viognier, though with better acidity, making it an excellent food partner.

Cullen "Mangan Vineyard" Sauvignon Blanc Semillon 2011

This is a delicious and elegant wine from the magnicifent Cullen winery. This is a blend of Sauvignon Blanc and Semillon with a magical combination of delicacy on the bouquet, and explosive intensity on the palate. A delightful combination of fresh and clean lemon and fresh cut grass aromas; elegant and crisp, combining intense lime and lemon flavours.

Clonakilla O'Riada Shiraz 2011

Clonakilla is Australia's most celebrated name in shiraz viognier, and O'Riada is its belnd from four vineyards around the district of Murrumbateman, just north of Canberra. "A celebration of spice," proclaims the bottle, and it certainly delivers, laced with white pepper, potpurri, curry and exotic spices of all kinds. It's tangy, crunchy, harmonious, textural and delicious.

One of Margaret River's most highly regarded wineries has gone further afield, to the Mornington Peninsula, in their quest for great Pinot Noir. This is the second vintage for this Mornington Peninsula grown and made Pinot Noir. It is quite savoury in character at first and then unveils attractive strawberry and quince jelly notes. Billecart-Salmon Brut Champagne
The house of Billecart-Salmon, founded in 1818, is one of the few to remain family owned. The grapes of this cuvee come from the very best vineyards in Marne. The aromas are of ripe pears with a delicate touch of cut hay. It offers fine freshness with an elegant fruity flavour, leaving a clean fresh taste in the mouth.

White Wines

Saint-Veran Pierre Andre 2011
This Saint-Veran from Burgundy has characters of apricot, peach and notes of almond and honeysuckle. The palate is round and rich, complemented by a crisp acidity. It is very refreshing with a long, clean finish. It pairs well with most appetizers, as well as white meat or fish dishes in cream sauce.

Spy Valley Marlborough Sauvignon Blanc 2012
This New Zealand Sauvignon Blanc exhibits the classic Marlborough aromas of grapefruit, elderflower and tropical fruits. It is pure and fresh with a silky texture. The attractive fruit characters carry through onto the palate with a marked intensity of flavours. The wine displays a long and crisp finish. It is an ideal match with grilled seasonal vegetables or seafood dishes.

Murray Street White Label Barossa Shiraz 2008
The fruits of this Barossa Shiraz are sourced from nine differently managed blocks from a variety of fantastic vineyards, giving the wine great complexity. On the palate, cherries and plums tantalise supported by chocolate and coffee nuances. This is an elegantly structured wine with generous weight and length.

Fleurie Cuvee Prestige Les Chambards 2011
Fleurie, made from 100% Gamay grapes, is often considered as the Queen of Beaujolais. The bouquet of this wine shows lovely flowery notes. On the palate, exquisite fruit flavours balanced with a touch of freshness from the acidity. This beautiful wine is silky and persistent. It goes well with red meat, poultry and goat cheese.

Port

Dow's Late Bottled Vintage Port 2008
This wine is sourced from the same vineyards that in exceptional years produce Dow's renowned Vintage Ports. It is aged solely in oak casks and bottled 5 to 6 years after the harvest. It is a full rich Port with spicy fruit flavours and an elegant aromatic nose, well rounded on the palate and has the traditional Dow's drier finish. This makes it one of the finest Late Bottled Vintage Ports available.

Dr Loosen "Blauschiefer" Riesling Trocken 2012, Mosel, Germany
"Blaushiefer", also known as blue slate, is the primary soil in the villages of Bernkastel, Graach and Wehlen in middle Mosel. Rich in potassium, it provides vital nutrients to the vines and gives the wines a pronounced mineral edge that enhances the naturally high acidity of Riesling. The vineyards are characterised by incredibly steep slopes, a favourable position near the river and excellent drainage. An absolutely refreshing wine to drink, it has bright and pale colour coupled with the classic white peach fruit and floral, flinty and mineral aromas. A plush attack on the mid-palate leads to a deliciously firm, delicate finish. Our signature satay is an excellent match.

Chateau Liversan Aoc Haut-Medoc 2010, Bordeaux, France
Located in the area of Saint-Sauveur next to Pauillac, the vineyards of Chateau Liversan have existed since the 18th century. The soil made of gravel limestone on a chalk subsoil acts as a filter flavouring the vines' roots. This well-known property has produced a solidly structured, feminine style of wine with hints of rose petals intermixed with red cherries and slightly blacker currants. It is a mid-weight wine with good body, decent acidity and driven by pebbly tannins, which push the dark plum, currant and tobacco notes along. A hint of warm stone graces the slightly grippy finish. This wine is excellent with steaks and roasted lamb.

M Chapoutier Crozes-Hermitage "Les Meysonniers", Aoc Ch 2010/2011, Rhone, France
For the last 200 years in the Rhone valley, Chapoutier has been producing some of the greatest wines including this Crozes-Hermitage that are cultivated either organically or bio-dynamically to respect mother nature. An exceptionally great northern Rhone from the minimum 25 years old Syrah vines on hillside slopes produces a classic violets-and-milled-black-pepper fragrance and peppery smoky-sweet, blackberry-fruit quality infused with spice and balanced by elegance and freshness. The wine is an intense red with purple reflections. Red meat dishes go well with this wine.

Taylor's Fine Tawny Port
Fine Tawny Ports are joyous mixes of nuts, spices, dark fruits and chocolate, and this fine example is no different. A lovely amber aged hue meets the eye. Aromas of mixed nuts, sweet wood, and jammy chocolate greet the nose. The palate is warm, mellow and full of dark fruit and ripe fig nuances. A very fine tawny which can be effortlessly paired with strong cheeses, chocolate-based desserts, or dried fruit and nuts. The versatility of Port is often underestimated.

Dow's Late Bottled Vintage Port 2008

Taittinger Brut Reserve NV Champagne
Champagne Taittinger's origins date back to 1734, and today it is one of the few Champagne Houses to be owned and actively managed by the family named on the label; Pierre Taittinger acquired the House in the early 1930s. Taittinger Brut Reserve characterises the House style, which uses a high percentage of Chardonnay in the blend. Such Chardonnay dominance helps create a style of delicacy and finesse that merits the Silver Medals awarded at the Decanter World Wine Awards, International Wine & Spirit Competition and International Wine Challenge in 2012 as well as a Silver Medal at the Drinks Business Champagne Masters this year. Its lean palate has considerable depth and elegance with a long, fresh finish making it a perfect aperitif.

Champagne de Castelnau Brut Rose NV
The House of de Castelnau was founded in 1916 originally in Epernay but is now based in Reims and is home to a range of fine Champagnes. The Brut Rose is a fresh, salmon pink colour with a subtle nose of wild strawberries and cherries, with flavours of fruit eaux de vie, cherry kernel and tobacco. Rose Champagne is the only French Appellation Controllee wine that can be made by blending red and white base wines, and most is made this way. De Castelnau uses red wine from Pinot Noir grown in Cumieres and Ay. Its resulting blend is full bodied and rounded, ideal as an aperitif or with any of the starters.

Champagne Boizel Grand Vintage 2004
The ripe, full-bodied style and the warm brioche and yellow fruit notes reflect how good a Champagne vintage 2004 can be in the right hands. There are hints too of dried pear, honey and almonds from this blend of 50% Chardonnay, 40% Pinot Noir and 10% Pinot Meunier from some of the top villages of the Montagne de Reims and Cote des Blancs. On the palate, the wine is intense and fresh with a long finish. Boizel traces its history back to 1834, and the House is now run by the fifith generation of the family, headed by Evelyne Roques-Boizel and her husband Christophe.

White Wines

Chateau Olivier 2011, Grand Cru Classe Pessac-Leognan, Bordeaux, France
Chateau Olivier is one of the oldest wine chateaux in the Bordeaux region with a history that dates back to the 12th century. This classified growth is reputed for outstanding wines of elegance, balance and finesse like this blend of Sauvignon Blanc and Semillon that has been seasoned with a splash of Muscadelle. Fermentation in oak barrels has created a mosaic of flavours that embodies this Grand Cru Classe white. Tropical layers of papaya, passion fruit, apricot, mango and pineapple seamlessly flow from the bouquet to a long and silky finish. Try it with any of the starters or the fish dishes.

Reata Chardonnay 2010, Carneros, California, USA
The spectacular coastal lodge that is the centrepiece of the Reata Estate crests the beautiful rolling hills that sit at the southern end of Napa Valley. Reata, the Spanish word for "lariat", captures the many threads of Californian history that run through this winery. Less than half of this wine has been fermented and aged in oak barrels allowing all the true, ripe Chardonnay characters to shine through. Flavours of ripe pineapple, tropical fruits, creme brulee and a freshness on the finish make it a great partner for poached salmon, chicken, pork and most dishes with a cream-based sauce. A multiple Gold Medal winner.

Chateauneuf-du-Pape 2011, Domaine Font de Michelle, Rhone, France
The Domaine is situated on the site of an ancient Roman spring called "La Fontaine de Michelle", and the Gonnet family has farmed grapes here using organic principles for over 25 years. This blend of classic Rhone red varietals includes Grenache, Syrah, Mourvedre and Cinsault. It gives a rich wine with cherry, blackberry, plum, liquorice and spice characters, and delicate tobacco, mint, chocolate and leather notes. It is full bodied and rounded, and will open up in the glass. Its complex characters make it the perfect accompaniment to game and beef dishes.

Carmel Road Pinot Noir 2011, Monterey, California, USA
The wines of Carmel Road come from a remarkable group of hillside vineyards that lie within the Salinas Valley of Monterey County. Early morning fog, cool maritime winds and afternoon sunshine combine to create the perfect growing conditions for world-class Pinot Noir. The winery is dedicated to an innovative sustainability programme designed to protect the region's unique terrior. Generous in character and varietal typicity, this wine is rich with the flavours of coffee beans, cinnamon, rosehip and mulberry and has distinctively crunchy blackcurrant tannins. Enjoy it on its own, or with poultry or vegetarian dishes.

The wines are made in limited quantities and can be a little hard to find. They are definitely worth the search. 2011's long, cool ripening period resulted in intense flavours at lower sugar levels. This wine carries a zesty aroma of citrus fruits and honeydew melon. A bright, light, refreshing palate with a crisp finish.

Winemaker and current Qantas wine consultant Stephen Pannell made a great name for himself with Hardy's iconic McLaren Vale reds. A Rhone-inspired juicy, though structured red.
