unless late flights are all suspended, the closing times are way too early for IAD, DEN and IAH. Flights West (and red eyes) routinely depart later esp when delayed. Maybe there are no delays with volumes reduced but that will change with winter weather.
Are the *A lounges open (eg TBIT @LAX, LHR, etc.)?

LOL yes I guess it is - and my standards are not what they used to be unfortunately due to COVID.... I normally enjoy that LH lounge but it was just a place to sit -- nothing really else available inside... When I was based in London I would use that lounge as I flew LH a ton and didn't see the need to walk all the way to the UA lounge at the remote pier.

The SQ lounge at LHR reopened on Monday November 2nd - it is out at T2B, so close to the UA gates. The lounge was empty - I was the only passenger. They’ve closed off the buffet area, and instead they have staff serving food and drinks from temporary counter there. There was an extensive menu of cold and hot food, from cheese plates to chicken curries. Big upgrade from LH and far less crowded.
At SFO on departure I was given a card and amenity kit when checking in - the card can be used at the bar by Polaris passengers for any top-shelf wine or liquor items you’d normally pay for, plus a packaged cheese/salami tray. Kudos to UA for adding this in while the Polaris lounge is closed.

In DEN west at 10am. Just breakfast stuff. Old Y "oats", chobani, eggs, fruit cups, granola bars, fruit. Nothing even with poaching for my next flight and all ice cold

This is not deserving of any kudos, it's a slap in the face against any customer who was suckered into paying for Polaris. What I would expect from a Polaris hub experience, is being offered an unlimited choice of hot soups, hot entree dish, and special desserts along with unlimited premium beverages from the lounge, to be brought out from the kitchen to me by a staff member, along with a reserved area of the lounge set aside just for Polaris customers.
This is an upgrade for United at the moment compared to their competitors.

Maybe in normal times. For me Polaris is all about the lie-flat seat and gel pillow, but then again I realize that not everyone is following the CIA diet in syncing food & bev intake to destination. Then again, I was never fond of the Polaris dining menu (buffet excepted), so I'm not missing much.
While there are (were) business travelers who are not paying for the ticket and just want a seat/bed to sleep and to be left alone, a significant constituency of customers are analyzing the full value of the product and deciding if $6,500 for a dumbed-down experience on United Polaris is really competitive against $6,500 for a full service experience on NH, BR or LX. Unless you need United BIS, I just don't see the value proposition offered by United right now.
If I told a client to go buy a sandwich in the airport terminal before their flight as others have suggested, they would be an ex-client pretty quickly.

I guess for some, only the seat matters - but depending on your destination there are better seats and pillows - and much better inflight service. For me, as a consumer, I am looking at the total package - lounge/seat/onboard meals/onboard amenities/onboard service.

With hotel booking websites, there is a disclaimer - usually - that informs the customer about lounge closures, restaurant closures, spas, fitness centers, etc etc - so, in most cases, the customer is informed before booking to expect very little in terms of services and amenities. When booking a Polaris flight on united.com, does United clearly spell out which services are cut back or limited, from the specific perspective of a Polaris flight experience? No.
All of us know because people post their experiences - but Joe-off-the-street? It shouldn't be 'caveat emptor', it should be clearly disclosed in one place for a consumer to make an informed decision.

I find it hard to believe that Joe off the Street is more than a couple of percentage points of Polaris buying given the near total lockdown of the world

Can’t they ask their TMC? Alternatively, this isn’t Joe of the Street.com but rather Flyertalk.com. If Joe off the Street isn’t on this forum, does it matter?

Not following your logic - you're saying that only Flyertalk members buy Polaris or should be aware of current product offerings? What is a TMC? Travel agent? So your theory is only people who have travel agents buy Polaris, and if they don't, or aren't FT members, they don't matter to the business?
A TMC is a Travel Mgmt Company that manages corporate or business travel on behalf of companies.
