You can check for interview availability (without needing to be logged in) at TTP - Schedule Appointment
This page includes a checkbox you can use to show locations with the soonest availability, although they tend to be few in number and near border towns.
You may also wish to consider:
Note also that a location that has literally zero availability for future interviews today, may pop up with available slots tomorrow (or even later today), presumably as people with scheduled appointments do EOA or walk-in thus freeing up their original time slot. So it may be worth checking back periodically.

You may also wish to consider:
- Enrollment on Arrival, which can be done while clearing immigration during international return to the US: Global Entry Enrollment on Arrival
- Some locations offer walk-in interviews even if you do not have an appointment: Global Entry Walk-In Interviews
- If you will be passing through MIA, their GE office nearly always has immediate availability and is open very late.

In east Tennessee, a number of interview slots have opened up for next week. Tri-Cities airport(Blountville).
Slots are all taken, they went fast.

In an effort to better serve the traveling public and improve transparency, U.S. Customs and Border Protections (CBP) Trusted Traveler Programs (TTP) will release interview appointment slots for enrollment centers on the first Monday of every month by 9 a.m. local time.

This interview thing is absurd as there are no interviews. This is disgraceful government mismanagement. Is there a good summary somewhere about how to get an "interview upon arrival"? I have a few international trips booked for the next few months and that seems like the easiest approach (assuming that approach actually works). I'd also be willing to stop in at Customs before my domestic flight and just ask for an on-the-spot interview is there's a plausible chance that would work. This is just for a renewal.

Are there interviews for zoom now? When I looked 3 days ago, there were zero interviews available. There were nearly zero in-person interviews as well, except a few on the Mexican border. Is there some alternative place to look specifically for some sort of "renewal" interview -- not what shows when you click "schedule your interview" on their website?

For renewal most people do not need an interview. If you have been selected for an interview it is typically because something in your renewal application has triggered it - usually on of the countries you have listed in your travel history over the last 5 years. I suspect in my case it was the inclusion of Cuba that promoted an interview.
There is no winning involved, and the interview is usually pretty straight foreword part of the renewal process. If you find this all too much trouble, just let GE lapse and go back to using the normal lines.
