25. (1988) ... Toronto’s only direct (one-stop) service to the Virgin Islands – specifically St. Thomas. ... Please identify the airline, aircraft and the enroute stop, eh!
I can’t recall exactly when they set it up or how long it lasted, but I know AA had a “hublet” of sorts for their Caribbean services (which I do remember included long flights on ATR-72 turboprops to Barbados (BGI)) at San Juan (SJU)
San Juan is indeed correct! And kudos to jlemon for his additional color commentary. I flew through San Juan many times while taking advantage of Eastern Airlines' Unlimited Mileage fares. I remain eternally thankful for the air-conditioned refuge of the Ionosphere Club during my many layovers at SJU. Here's the schedule out of Toronto:

Now it just so happens that on a business trip two days ago, on my way home I chanced by a pub I've known, very occasionally, for more years than I care to admit, way out in the countryside beyond Cambridge, so given the heat of the day, and notwithstanding the AC in the car, I decided to go in for a drink. And there was an absolute classic pub menu, featuring exactly this, although on this occasion I didn't order it.

If you want a real bit of old England the pub is this one About Us ? Maids Head . It has an elegant restaurant side, and a pub bar side where the drinks are cheaper and the seats are wooden but the food is just the same. Highly recommended.
Those old enough to remember the movie Shirley Valentine may recollect the scene when she had got a casual waitress job in a Greek holiday resort taverna, with the elderly English couple looking gloomily at the Mediterranean dishes on the menu, when she offers them quietly "it's not on the menu but I could make you both some ham egg and chips" - and their holiday is duly brightened.
I suppose I should put SOMETHING about aviation content here, so will merely add that when I was in the parking lot of the pub there one quiet winter morning in the 1990s I got beaten up by a USAF KC-135 tanker, likely from Mildenhall base, seen from afar to be coming over the decidedly flat landscape straight over me at about 1,000 feet, leaving a significant smoke trail behind it.

Thanks for the hint, although with the exception of the TU-104 (an obviously incorrect answer) I can’t think of any non-four-engine jetliners in 1961. Speculating wildly, how about a Pan Am 707 via San Juan (SJU) and Santa Maria (SMA) in the Azores
Now we're cookin'! Although the airline was not Pan Am and the aircraft was not a 707, Santa Maria (SMA) was indeed one of the stops. So let's call that a small flame applied to the kindling of the correct answer. Please, carry on!

I don't know much from the pre-jet era. True, the Comet was flying in 1958.

The airline was Transocean Air Lines operating Lockheed Constellation service on a routing of Hartford - New York Idlewild - Chicago Midway - Burbank - Oakland. I do not think the service was operated on a daily basis.
I also believe Transocean operated nonstop Constellation service from both Burbank and Oakland to Honolulu with one of these flights continuing on to Wake Island, Guam and Okinawa. In the case of Burbank, this was the first nonstop service between BUR and HNL. It would be many years before another air carrier would operate BUR-HNL nonstop flights and that airline was Aloha with B737-700 ETOPS service.
BTW, in later years there was a another airline which used the Transocean name and they were based right down the road from yours truly here in southern Louisiana. This air carrier was primarily a charter outfit which operated Convair 580 and Lockheed L-188 Electra turboprops as well as B727-100, B727-200 and Super DC-8 aircraft (including a series -71 that had been previously flown by United). This version of Transocean (they used the name TransOcean Airways) began life as Gulf Air Transport and was based at the Acadiana Regional Airport (ARA) in New Iberia.

Ah, I think I know the identity of this airline with this knowledge coming from my roots in southern California (I was born and raised in Pasadena and became familiar with Burbank Airport at an early age).... I'll guess it was Aerovias Guest, operating a leased Mexicana Comet, running Mexico City-Miami-Bermuda-Santa Maria-Lisbon-Madrid.
Good call, Mr. M! It was indeed Aerovias Guest which, aside from BOAC, I believe may have run the only scheduled trans-Atlantic Comet flights between North America and Europe. This flight continued on to Madrid which I neglected to include in the question as it might have made the answer too obvious.
