Make sure you buy decent quality cables. I have seen a lot of difference between the $3 cables I bought on Amazon and the $40 cables I bought at the local store!!
As for wall mount I just bought this one:

In Australia Jaycar do good quality cables at reasonable prices.

I bought this Wall mount bracket from this seller on eBay and found it to be very good quality and easy to install my 45" 1,080p Sharp LCD screen.

I'll give another nod to MonoPrice. For longer runs (35-50ft) I would reccomend the 22awg, for everything else the 24awg/26awg/28awg is fine. I would stay away from "equalizers/extenders" as I've had bad luck with them and had a better signal using just 50ft of 24awg. I also really like the color-coded 28awg for short patched of multiple sources into one switch/receiver. I have 3 sources going into my Pioneer Elite 82TXs... I use Blue for BluRay, Red for HD-DVD, and Green for Tivo. Very helpful at the receiver end to easily identify which cable goes back to which source.

+1 again on Monoprice, bought a bunch of stuff from them. Nice custom component to VGA connectors. As for HDMI, I have bought their lowest and highest range cables, in 1.5-3M runs, and notice NO differance with various content sources, blu-ray, sports in HD 720p and 1080i, 1080p with blu-ray, I couldn't see any differences on a 58" plasma or 46" LCD at 1080.

I have used $ HDMI cables from monoprice.com and meritline.com and see no difference from the $$$ Monster cables I first borrowed from my neighbor to initially set up my HDTV.

I have $$$ Monster cables on all my TVs and my parents' as well.
For cable/satellite I've used both 700 and 1000, and for DVD/Bluray the same.
I think almost all of my cables are 6m cables.
I definitely notice a difference, but it is dependent on length, and on component. For example, a 6m cable for Bluray highlights the difference between 700 and 1000, especially in 1080p. Beyond this, it is somewhat imperceptable.
For cable/satellite I've used both 700 and 1000, and for DVD/Bluray the same.
I think almost all of my cables are 6m cables.
I definitely notice a difference, but it is dependent on length, and on component. For example, a 6m cable for Bluray highlights the difference between 700 and 1000, especially in 1080p. Beyond this, it is somewhat imperceptable.

Just a couple of other useless tidbits...
#1 It's not the cheapest way, but I've sent a few boxes of cables & the like to Oz recently using USPS International Priority flat rate boxes. The cost is $36 USD and you can send up to 20 lbs. If there are any other cables you think you might EVER need (VGA extensions, Cat 5e, they even carry computer power cords with Oz plugs) stock up. I'm eventually moving there and can't face the prospect of having to get stuff from Dick Smith or Harvey Norman. Priority mail takes about one-week to hit your doorstep and you can track its progress on-line.
#2 I've placed some pretty large orders for my company with Monoprice & have usually dealt with a guy named Sean (not sure but think he runs the place). That's one thing I meant to mention about Monoprice... on small orders the shipping can be steap. Sometimes it's cheaper to go to eBay if it's just 1 or 2 cables. If the total order is over $25 or so before SH then Monoprice usually gets the edge.

I decided I had to order today for any chance of having a delivery by Friday (I should have done this a week ago, I know).
There is a great AV forum in Australia where I've traded some discs and found some very helpful people.
As a result of Willyroo's comments above, looking at eBay and the forum above I bought from Selby, a reputable Aussie company which has a good range of more than just cables.
In the end I bought a 75cm and a 1m cable, plus a tiltable plasma wallmount that can take 80kg of weight.
For any Aussies, I recommend the above forum, as regulars get some good discounts, like this 20% off coupon for members. Please update this thread if you use it.
Result: A tilting version of Willyroo's wall bracket & 2 short (supposedly quality) HDMI cables shipped interstate for AUD$100.
