Doesn't matter - you can only use 1 GC per month per payee (account).

I know that. I can pay $200 of each payment with the gift card and the remaining leftover amount from my checking account. Normally up until now I would buy two $500 VGCs at CVS, pay the 2nd mortgage and car payment and use the remaining amount for electric and gas bills and have some left over that I'd have to liquidate with regular spend. This would earn me 1000 points/miles (500x2) for $9.90 (about 1 cent per point). If I bought 3 $200 cards at Staples instead (since they don't sell cards that have greater than a $200 value), paid a $200 payment each for mortgage and car, and used the other $200 for electric and gas, even at a $6.95 fee for each $200 card, I'm still coming out ahead using the Ink card to get 3000 points for $20.85 (0.7 cents per point).

Regarding the 5-day window, this is what the Chase rep told me about unallocated funds. You can send funds to your mortgage as often as you like, the funds will sit unallocated until you tell them what to do with them. If they are received within 5 days of the due date, you can allocate them to interest, otherwise it is my understanding that the funds will be allocated to principal. Call Chase and ask them about your specific scenario. There is no risk to calling, just time spent. Report back here if you hear something different (and consider adding/modifying the wiki then, too)

On 11-20 I submitted a payment for my auto loan via Evolve, for payment on 11-24. I just checked to see if it had been credited to the account yet - and it shows payment received 11-21. Under promise, over deliver ^.

This only applies if you send in the payment before the 1st of the month. If you pay after the first, the payment is held until you submit the full payment amount and then the whole thing is applied to your monthly payment. I send $500 on the 1st of the month through Evolve and then the rest via other bill pay services. Once Nationstar receives the total amount, they apply it to my payment due.

Is anyone able to pay Chase Mortgage? I haven't been able to pay Chase Mortgage for several months already.

Yes but I make only 1 payment per month. Are you paying the same mortgage from 2 accounts? Did you ever get a warning email from Evolve about any problem with the payment?
