This has to do with limiting the number of seats so as to have 1 less FA, IIRC.

It's a horrid 'table', too. I wouldn't want bragging rights for being on that project team. I've had to wonder how much LH spent in total coming up with that--too much and not enough at the same time.

Flying OS 772 - I picked a seat in row 8 because the entire "mini cabin" is empty. The front cabin is half empty too, but both 1A and 1K are available. I would take them, but wonder why no one else did. Are those seats somehow undesirable?

I'd take 1A or 1K at any time. Bigger foot holes. Very desirable throne seats.

As much as I like 1K, I prefer 1A slightly more. Because it is closer to the lavatory in the corridor behind the curtain in front of you. When in 1K, you need to go through the galley full of food and drinks, and it can be awkward. Nevertheless, these are the best seats.
By the way, has the chef on board service been discontinued? There wasn't any chef on board of my OS VIE-BKK flight. Just regular FA service. The coffee menu was very short, and it used to be so extensive in the past.

I liked the 1K. Crew discourged the use of the forward lavatory, so everyone went to the back and I had fairly little traffic nearby. The "foot box" space was excellent.
Cart service is sort-of back, in that the first dish and the dessert roll out on carts. The main plates are brought individually from the galley. None of the past "chef service" though. (Offtopic - food was fine, but also nothing like back "before COVID").

Flying VIE-IAD on OS with my girlfriend on the 763 in J shortly and see that the bulkhead 1D/1G seats in the center are available. I know on the 772 that the bulkhead seats of 1A/1K tend to have a little extra space and a bigger footwell, but is that the case for the 763 as well? I usually fly OS solo and take a single window seat, but the g/f doesn't want to do two window seats. I'm 6'5", so a little extra space is always appreciated for me, so figured it might be worth grabbing the bulkhead if I have to give up my window seat. Thanks!

Can anyone comment on row 11 on a 789 26J? It appears to be a bulkhead row, but not being sold as XL? I assume it's bassinet row?
Are the bassinets in the middle and both side sections? Any extra legroom or more like just knee room? Would I get booted from one of these seats of a legit person with a bassinet needs it?

I took a peek at row 11 last month while flying DEN-FRA in row 9. Its not very spacious. Row 27 is sold as extra leg room. And yes, if there is an infant seat booked they will be in row 11. Bassinet seats need to be reserved (and paid for) in advance so its unlikely to be your seat.
