I don’t think anyone knows. The main reason EK are in this predicament is because of Boeing’s inability to deliver the 777 X. What EK have announced is that the A350 deliveries start this year, and they will retrofit a significant proportion of the 77W fleet.

Assuming that the 2-class frames are NOT part of the retrofit program, I can count 79 three-class B77Ws to be retrofitted, with the oldest being A6-EGA. This of course is speculation, no idea what EKs actual plans are and whether or not they will actually manage to complete the program in a reasonable time.
It is very unlikely that any of the EBx 777s will get the new cabin. They will be long retired before the program is even halfway complete.
As IntrepidAfrican already mentioned, the only reason this is happening is because of the 777X delays. Even the A350 has been delayed twice now, it was initially expected this month, then delayed to November, and now delayed again to early December.

It also does make me wonder why Emirates didn’t start refurbishing the oldest 777’s and A380’s that they knew they were going to stay in the fleet for a good while yet. Surely that would be far better for the passenger experience than doing the newest first and keeping the older cabins flying longer?
On the A380’s that have been refurbished with PE, have they been fitted with the latest version of ICE in economy or have they kept their original screens?

A6-EOI returned to service yesterday and went out on EK7/8 to LHR today. Given it's just returned from 2 months out of service and gone out on a premium economy route, has this aircraft been refurbished and fitted with PE?

He might be on to something.
ExpertFlyer and EK website both show PE availability for EK 8 today which is supposed to be operated by EOI. I didn't expect EK to start retrofit on older frames without completing the EUx series first.
For most of the other retrofits, EK has typically arranged C-Checks to be carried out simultaneously with the retrofits, hence the long periods of inactivity (~50 days per aircraft).
EOI has been out of service since 22nd May and it performed a test flight on 16th August, making it inactive for almost 90 days.
Seatmap also shows 14F/76J/56W/338Y which is the ULR config, quite odd considering EOI is not a ULR configured A380 and does not have any crew rest area, similar to EUM which has 341Y seats instead.
I'll wait for further confirmation before adding it to the list.
