After 35 years of trying different places, my favorite bbq is still found at 2 smallish chains in TN: Buddy's & Calhoun's.

Finally, a chance to offer something to you all. I do know barbecue. I have childhood memories of hogs hanging to be cooked in my backyard.
Without a doubt... Parker's barbecue in Wilson and Greenville, Bill's in Wilson, and Wilbur's in Goldsboro. All in eastern NC.

Hands down, The Rendezvous in Memphis, TN.
A great chain for ribs is Houston's. Several levels above anything you could ever get at a TGI Friday's, Chili's, etc.

Forget steak and big $$$s gourmet restaurants. Let's get down to basic, American BBQ and share with us your favourite spot(s) in Kansas City, Memphis and other cities renowned for their ribs and shaved beef. I'm a novice here, and would like to set out to explore some of these spots over the coming months. My experience in this realm is limited to that place in San Diego featured in TOP GUN, a hut off the main drag in Austin, and the recently expanded place across from TOYS ARE US off BROADWAY in NYC. I know what I like in smoke, sauce and meat, but seldom find it. So I am sure there are enough folks out there who have experienced their empitome, and would be willing to share it with others. BTW feel free to also suggest local craft/microbrews to accompany the main dish.
Sam and Dave's BBQ 1 in Marietta, Georgia. Hands down best pork in the southeast and honestly the best brisket you'll find in Georgia (which is not a common thing in GA).

Houston's ribs are good, but man give me a small mom and pop place any day of the week and it's much more enjoyable overall.

I also agree about mom and pop over a chain, but sometimes, in some places, you just want some consistency and to know what you're getting yourself into. That's when I go to Houston's. Take NYC for example, there are a couple hot spot BBQ places (Blue Smoke, Wildwood BBQ, Dinosaur BBQ), but for ribs I mostly choose Houston's. You won't find me at the Houston's in Memphis though, at least for BBQ.

Texas and Tennessee probably contain the most serious of the BBQ fanatics
