Percentage wise (Michelin stars versus population) Switzerland scores best (highest percentage of Stars) of all European countries (including France!).

Went to Le Bernardin for the first time last night. Certainly lived up to the expectation!

We went with the chef's tasting menu plus wine pairing and added a cheese course. The Lobster, Dover Sole and Sea Bass were particular highlights amongst an overall stunning meal.

We went to Daniel when it was still 3* and I found the connoisseur's wine pairing throw some more interesting wines in (mid 1980s Reislings) but the wine options at Le Bernardin added a whole new dimension to the dishes that I've not experienced at other high end tasting menus.

As an added bonus our "Captain" invited us into the kitchen for a little tour and to meet Eric Ripert. Incredible...from the peace of the dining room to the hive of activity going on in there was mind blowing, and of course meeting the man himself!

That sounded like a great experience! For some reason I'm always under the impression that most of these famous chefs are never in the kitchen anymore, with the exception of smaller places like BF's Chef's Table. It's good to hear that you can still find them there!

When I was at Jean-Georges in August he was in the kitchen cooking (and this was a random Tuesday), and even came around the dining room and said hi! His snapchat story that day showed him excitedly preparing the charred corn ravioli from the seasonal tasting menu. I was very impressed.

Some years ago when Daniel was still a three star my wife and I were there for Thanksgiving dinner. He came out and walked around the dining room talking briefly to everyone.

In 2014 my wife and I were at a 3 star in Rheims, France and the chef came out and was talking with us. My wife asked him if he would pose for a picture with us, he happily agreed and gave our camera to one of his waiters and posed between my wife and I.

Most moving though was an event that happened in 2001. We had eaten at Taillevent in Paris which was a three star at the time, the week before the September 11 attacks. A short time after the attacks we received a handwritten letter from the owner, who said he noticed from our reservation that we were from New York and that he hoped we and our family members were safe and that France fully supported the US in that terrible time.

Oh wow, what an incredibly thoughtful and kind gesture from Taillevent!

Aside from Brooklyn Fare where chef Ramirez is always kind and talkative with us, the only other time I saw the chef was at Ko. David Chang simply walked in and out of the kitchen a few times, and stood in the back observing everything with his arms crossed.

I had assumed that too, although during our Daniel visit as noted in the previous post Daniel Boulud was there too doing the rounds in the dining room and talking with all the patrons.

Very different. Yes, many do their rounds but in European restaurants is normally only 1 seating instead of 3 so much less fluctuation. So many Chefs really do a lot in the kitchen.

Restaurant Andre, in Singapore, is handing back their Michelin stars, in preparation to close soon. It is also ranked #2 restaurant in Asia and #17 in the world by San Pellegrino.
The owner is moving back home to Taiwan, I believe to open another restaurant and a culinary school.

I really enjoyed my meal there about 5 years ago. I plan to go back, I wonder if/how much they've improved since they have received their numerous awards and fanfare.

Wow! Though only at 2 Michelin stars, I know many believed Andre to be the best restaurant in Singapore.

In other news, the SF/Bay Area 2018 Guide was due to be released yesterday, but has been indefinitely postponed due to the fires there.

I think I would agree, the best meal I've had in SG is from Restaurant Andre. I also read that he wishes for any of his restaurants in the future not be considered for Michelin ratings. Looks like he's 'over' it.

Keep me in the loop with the new Michelin guides being released! Interested in SF guide especially, plan to do a trip there early next year. Mostly for golf and breweries though

I have an upcoming short trip to London and will be checking out a few restaurants.

In addition to a return dinner visit to Hedone, we will also be dining at two starred Claude Bosi at Bibendum and a lunch at Portland. The latter was motivated based on a review on FT by uggboy. Alas, Marianne is fully booked so we will have our first visit on some other future trip.

Other non starred meals will likely include Barrafina Dean Street, and a possible visit to Mere (Monica Galetti's new restaurant after Le Gavroche).

I'm open to other suggestions but will be sure to post any notes once we are back.

I hope you enjoy Claude Bosi as much as I did! The food and in particular the service style are elegant French at its best, which I adore for a leisurely meal. I ate a la carte but will absolutely be back to try the tasting menu. I look forward to your thoughts.

Clare Smyth's new restaurant, Core, is getting positive reviews.
