This is what I used this time... 100g pancetta 1 onion 1 carrot 1 bit of celery 1 knob of butter 4 pork ribs (nice meaty ones are good) 2 rump steaks approx 250g each. glug of red wine squeeze of tomato paste 4 cans of baby roma tomatoes. for the involtini/dressing equal portion of parmigianno/pecorino and parsley a handful of pine nuts Pound out the rump steak (you can use chuck/sirloin etc – just a good fatty cut that will stand up to a slow cook) then spread the involtini filling in the steak and roll it up and tie with butcher's twine or toothpicks. Add olive oil to large dutch oven style pot and brown meat and remove. In the same pot add the butter (if you can get lardo use that), pancetta and sofrito on a very low heat and cook slowly until the onion is soft and translucent. Add wine and tomato paste and let the alcohol cook out Add the canned tomatoes and give it a swirl to mix everything up. Add back the meat ensuring it's all covered by the sauce – if it's not add a little water. Put on a very, very low heat uncovered on the stove. It shouldn't be simmering at all it should be maybe a bubble every 30 seconds or so comes to the surface. Leave for 5-6 hours. Remove meat (this is traditionally eaten as the main course) and you're left with the sauce. Pick a pasta and eat. Don't use spaghetti! There's are a million +1 ways to make this but this is more or less how I was taught. The most important things I think are unlike bolognaise this should have a lot of tomato sauce, the very low and slow cook which puts so much flavour in there and the meat needs to be whole pieces not ground (preferably with some bone in there). |

I don’t eat the shell like she did. I also don’t heat up the crab legs. Costco cold section to my car to our fridge to the serving bowl. At some point I’ll buy it from Costco where they failed to cook it and then I might regret not cooking this. I would use canned crab for crab louie. Jumbo lump. I heat up my crab legs. I don't think they are ever sold raw...why would Costco fail to cook them? |

I splurged and got meat today from Whole Foods' curbside pickup, putting it to good use for Sababa cookbook's coffee-rubbed ribeye steak. I had my doubts, but, once again, the cookbook came through. I was also made a fan tonight of halved broccoli florets mixed with salt, pepper, and olive oil before being added to a cast iron skillet with canola at medium for 2-3 minutes per side. They picked up a pinch of cardamon from the cast iron's previous guest.

That is not going to happen---Costco is not cooking them in the store. They arrive frozen and cooked and it would be very obvious if they are not cooked. You could never confuse a cooked lobster tail with a raw one--they are a different color and the meat is obviously different.

It’s Ash Wednesday. Mrs BV has requested a vegetarian meal. I have an eggplant, onion, zucchini, olive oil, garlic, a bell pepper and a can of San Marzano tomatoes so will produce some .......ized version of ratatouille for us. I suppose most of the .......ization will come from the spice cabinet. Sorry if I shocked anyone. I had no idea that b@stard would be censored.

You seem to be operating from the assumption that some person has two piles of king crab legs -- one raw and one cooked -- and is moving the raw ones to the pot to boil/steam, then moving them to the cooked pile, and that through some momentary lapse in judgment, they might forget to put them in a steamer and put them in the cooked pile. We have some shredded chicken from earlier in the week to use tonight, so most likely some type of buffalo chicken dish - salad, wrap, etc. It will be a game time decision since it should only take 15-20 mins to throw together. |

I know there is at least one poster who is eating less meat (or living with someone who does) for just over a month. Thought I’d include a few of my own meals that can be adapted.
Got my Thursday delivery of organic vegetables (plus milk, cream and eggs) and included were a batch of Jerusalem Artichokes (AKA sunchokes) which are a seasonal treat for us. For lunch I decided to make a dish I learned from a long-standing member of the Japan Forum. First I cooked some chopped onion in three kinds of vegetable oil (sunflower, rapeseed/canola & olive) then added thinly sliced Jerusalem artichoke. Next came sliced mushrooms, thinly sliced radish/daikon, sliced lotus root, shredded carrot and lots of cabbage and then a hot stock made with two kinds of miso, a spoon or so of sake, a little Mirin, soy sauce and dashi concentrate. Also added were a couple of peeled fresh tomatoes. All simmered for about 15 minutes. My kid had a small bowl with some toasted rice (yaki onigiri), I had a bigger bowl without the rice. It’s a good way to start eating Jerusalem Artichoke as, by thinly slicing them, you get to enjoy all the taste without eating too much of them. They have a lovely sweetness but the upside to this (sweetness is from a carb - inulin - that doesn’t get digested) is also the downside (the undigested ‘carb’ is a feast for bacteria that give you flatulence). Go easy, particularly if it’s your first time or you haven’t eaten them for a while. I find they make a great substitute for Japanese dishes that call for gobo/burdock root. Since my kid isn’t at school this week (neither physically or online) it’s the ideal time to reintroduce them to her. |

Phase II of the Reuben sandwich extravaganza. Tonight will be corned beef instead of pastrami. No potato salad. And I am making my own cole slaw from the cabbage given us by the next door neighbor from her garden. Also full sour pickles instead of half sour. I may throw kim chi on mine instead of sauerkraut. And FIL ate all the rye bread but bought a loaf at the local German bakery.

My old $40 Hamilton Beach food processor bit the dust. I debated whether I “need” to replace it and decided I should because a) I can afford to because we’re eating out so much less and b) there’s an empty spot on the counter and c) it takes too long to chop lots of vegetables by hand.
I’m not too impressed with the low end Cuisinart I bought off Amazon but will give it a 30 day test. The cole slaw below is an example of reason c. The recipe came with the food processor. It gets sweetness from ketchup instead of added sugar (my ketchup is sugarless) and also includes 2 tbsp of olive oil which my slaws don’t usually include. I made a couple substitutions based on what I had and didn’t have. Overall, it came out okay but I’m not done working on it.
