Went back to Lupita in Lisboa and ordered a carbonara pizza for takeaway as the wait for a table was extensive - went to a nearby park to eat and was approached three times by different folks wanting to know if I wanted coke - sadly for them, I don’t drink soda:

I think we will take our son and his friends to the mall and maybe get Kuwa conveyor belt sushi for supper. Exciting!

Grass fed prime tenderloin tonight with hen of the woods mushrooms. Reverse seared the tenderloin and did the mushrooms with ghee and Sauternes. Drizzled Villa Manodori dark cherry balsamic.

so it’s kind of a process. I do a quick dry brine - salt then refrigerator on a wire wrack for 2-3h. Then reverse sear - oven at 225 until 120 internal temp. Pull and rest for a bit, then sear on carbon steel (or cast iron) with ghee (can do a high smoke point oil), turning every 20-30sec. Let sit on the rack another 5 min when searing is done, pepper to taste.

really need a dry surface to get a good sear.

Salad - romaine, roasted tomatoes, onion, air fryer broccoli and carrots, roasted salmon, grated Romano with some olive oil, lemon, and a piece of baguette. It was what was for dinner!

I find that when working with chocolate and cream, it's better to go low and slow. Depending on the consistency desired, a double boiler is highly recommended.
