Mexican supper tonight at Baja Cantina, carmel valley ca

happy new year!

BamaVol Jan 1, 2022 9:28 am

It will depend on what’s open. Last night I suggested a midday meal out because tonight more rough weather is forecast and we will want to be near our places of safety when the sirens go off. My expectation is Struts or Jefferson’s for wings and beer.

work2fly Jan 1, 2022 10:03 am

We're going to try our hand at making a choucroute garnie today.

csufabel Jan 1, 2022 1:48 pm

Country style ribs
Chicken wings
Cole slaw
Collards

Not seen are the black eyed peas my parents ate earlier as I don't cook black eyed peas. They're lucky I cooked collards this afternoon as I don't like to make them either

Ahhhhh…the southern tradition. Pork, greens and black eyed peas as the the first meal of the New Year. I do the same, courtesy of my Dad’s side of the family. I did pork chops, sweet greens and coconut black eyed peas. My brother does chitlins in his household. No way I’m doing that!!! Best wishes!!!

Last night, we didn't feel up for making the choucroute, so we did a charcuterie board instead.

That reminds me that I soooo prefer cooked carrots to raw. Yet I eat raw carrots far more often. New Years resolution - more cooked carrots.

PS yours look delicious.

Me too! And thanks
I can polish off a lb of roasted carrots but raw I rarely have unless they are shredded like in cole slaw or something. Baby raw carrots aren't too bad,...dipped in ranch.

In Vegas again--was here to bet on the Sunday football games. With all of the fish talk I've been participating in, leaning towards having dinner at Yellowtail and try all the different kinds of fish on the menu.

Tonight I prepared a homemade manicotti. What a pain stuffing the shells! It tasted good…so all was not lost.

Put the filling in a ziploc bag and seal. Cut a corner of the bag and gently squeeze to fill the shells.

I love manicotti with meat stuffing, preferably a mix of sausage and ground beef. I think I’ll make that this weekend.

I actually tried this. Unfortunately, I cut a little too much off on the corner. So, too much filling was coming out, making a mess.
Next time I will get it right!

I always try to remember the rule of thumb in cooking... you can always add, you can't subtract... but that said, if your filling is too thin, then it don't matter if the hole is big or small. :)

You can also use a piping bag with a small tip.

Very true. However my filling was very thick, definitely filling the large hole, with more gushing out. Just took a little squeeze to get it going…🙂

Is a piping bag that thing used to decorate a cake? I never knew what it was called. (You can tell, I’m not a master baker). I just called it that bag thing that you squeeze to decorate a cake!🙂

I prefer them the way your family does. Hopefully with a little onion dip. But I recall Corky posted some bacon wrapped carrots a while back that I still need to try.

Tonight, halibut with grains and a kale salad. That alone might not tell you it's January, but my meals are going to look very similar to that unless I can go back in time to before Thanksgiving.

I will make them again...so good. And not just bacon wrapped but also glazed with maple syrup. Consider it dessert...like carrot cake. :D

We attended a potluck event tonight with a Hawaiian theme. I made sandwiches on Kings Hawaiian rolls using ham, emmentaler cheese and either a sweet pickle or a thin slice of pineapple.

Our table was called last and the entire front half of the buffet table was wiped out. As a result I had like 6 different kinds of meatballs in sweet and sour sauce and some odd cole slaw. Odd as in how? One of the ingredients appears to be uncooked ramen noodles.
