We attended a potluck event tonight with a Hawaiian theme. I made sandwiches on Kings Hawaiian rolls using ham, emmentaler cheese and either a sweet pickle or a thin slice of pineapple.
Our table was called last and the entire front half of the buffet table was wiped out. As a result I had like 6 different kinds of meatballs in sweet and sour sauce and some odd cole slaw. Odd as in how? One of the ingredients appears to be uncooked ramen noodles. |

Plenty fo vegetables and sausages. Boiled potatoes, broccolini, roasted capsicum, and garden salad with some really nice pork sausages (hickory and manuka honey, and fennel and white wine). Suits the weather it's humid, hot and wet.

Giant garden salad topped with homemade tuna salad. It truly was a garden salad as it contained romaine lettuce from my garden as well as pickled radishes and green beans from the garden. Other ingredients were red bell pepper, grape tomatoes and kalamata olives.
Also a small bowl of pea soup that survived a week in the freezer quite nicely. |

I've been taking an unintentional hiatus from cooking the past few months - first due to work stress, then due to not having a job stress. But with the new year and a bit of distance from that, I've been trying to get back into the swing of things. Been making very simple, hearty stuff the past week - a curried split pea soup with a ton of carrots and onions, pasta with baked tomatoes and kale (and lots of garlic and cheese :p). Next on the agenda may be a delicious brown rice/bean and chile casserole I found last year on - of all places - the side of a bag of rice. Haven't made it since last winter. I also should bake corn bread again. At the start of the pandemic, I bought an obscene amount of corn meal and tried a bunch of different recipes. But I finished up my apple butter and tried to go lower-carb, so I haven't done any baking in eons. I really need to use up all the corn bread stuff in my cabinet, though. |

Fair amount of business travel for me opening up the year. My last several dinners were enjoyed in a DL Lounge, Ruth's Chris in my hotel and a couple at Amex CLs. Sometimes life is funny; several weeks ago, I was in the mood for carnitas and was sorely disappointed the restaurant was out of it. So, what happens? The DL lounge where I had dinner was offering a type of taco station with pretty good carnitas, all things considered. One of the Amex CLs were serving a braised beef type of dish that is almost identical to the one I often enjoy in Cantonese cuisine, but instead of mixing it with rice or noodles in broth, it was poured over cheese tortellini.
So, as far as airport type fare goes, it's been, thus far, much better than last year! |

I will note that those with small spice and herb collections may need to invest in spices to cook this. (Not an issue in our house but...). As I recall, the ingredient list included fresh garlic and ginger, powdered ginger, cumin, tumeric, smoked paprika, hot paprika, cayenne, cinnamon sticks and more. I highly recommend checking out your local Indian grocery store if you don't want to pay a boatload for new spices and herbs. |
