Bianca pizza with added smoked pancetta from Granello Pizzeria in Athens - cost .50 EUR more than I expected based on the menu on Wolt, and the rap music was a bit loud - but the pizza was good

Spaghetti squash "baked ziti style"




Made it a couple of weeks ago for vegetarian friends, one of whom is gluten free. Tonight I added some hot Italian sausage.

You can improvise a double boiler, Just it might not look pretty. I'd probably do it with an induction hot plate, but a butane stove would work as well. Half fill a pot with water. Place a takeout wooden chopstick in (so that it sticks out a bit) and then a metal bowl that is slightly wider than the pot on top. Turn the stove on medium-low. The chopstick is just to create a bit of ventilation so the steam can escape, but voila, you've got your double boiler. Put the chocolate and cream in the upper bowl and watch it melt. Just remember to refill the water periodically. A glass bowl would work as well, just take longer to heat due to thermal mass.

Yeah, "Americanized Chinese food" is pretty darn good, if you ask me! Some of my friends always seem bemused that I just love PF Chang's. I get it. It ain't the real deal. But, in LAX, it's perfect on that balcony overlooking those wide-bodies. To this day, I still get grief for just loving Kraft Mac & Cheese. Throw in extra cheese, use half & half, bacon bits and some cheetos = comfort food nirvana.
