This is my new favorite breakfast. :D

Don't keep us in suspense--what sort of banh mi?! For breakfast, I'd go pork of some sort, but it would be interesting if they had breakfast varieties with, say, fried eggs as an ingredient.

Banh Mi stands, at least in Vietnam, virtually always have fresh hot fried egg as an ingredient option day or night. FWIW.

I don't think this place had any variety but pork.

I made it this morning. Ham, sharp cheddar and an egg over easy on a toasted baguette.

Cool to know! I don't believe they're an option at the place we usually go in the DC area... I'll have to check next time. I suspect my Vietnamese coworkers will give me a strange look when I ask if they can request an egg next time they call the order in.

Any breakfast with thick, juicy sausages is a great breakfast to me.
(oh, and non-powder scrambled eggs)

I had my favorite again a few weeks ago, chicken and waffles. It wasn’t as good as the Michelin starred restaurant that I had it at in Chicago or Amy Ruth’s in Harlem but it wasn’t bad. And it was less than 20 minutes from my house so a lot more convenient.

That was a quality breakfast, over in Orizaba, Mexico.

So Loan (the woman who usually coordinates our office banh mi orders) says she's going to ask this Friday if our normal place can add eggs. She said she never has thought to ask because "we all just do the egg at home and add it ourselves."

Let us know. I'm curious too, never having had a banh mi in the US.

My favorite breakfast has got to be something like this: Granola Parfait with a large side of mixed berries, a large Omelette (with tomatoes, peppers, ham, onion, spinach) with some potatoes and a 4 oz steak, 2 eggs over easy, a big stack of blueberry pancakes with syrup and some freshly baked donuts to end it all! Of course with some freshly squeezed orange juice and a coffee with African beans. Yum!
