I'm far from knowledgeable on the topic, but aren't they served in soy sauce? Or does "onsen" refer to the cooking style and they can be served various ways?

Wikipedia or Google is your friend.
However having yolk hard and white soft doesn't seem to be the same as a soft boiled egg. I am sure you could have them with soy sauce, I have no doubt other options are available. Always up for a new thing though. You never know till you've tried it. Given I will be staying in mainstream hotels (not Onsen) in JP I don't know if this egg style is easily available or even how to order it at places that might. My last abiding memory of Japan was being given an egg (raw in shell) along with my breakfast and not knowing what the heck to do with it :) (I know now) |

There will always be a lot of discussion on what are the best fine dining options in various locations. This usually covers lunch and dinner options.
But I generally like my best meal of the day to be breakfast and it doesn't seem to come up much so I thought it might be nice to generate a thread to discuss it, Personally I have had about three breakfasts that I would call 'great'. Hotel Granvia Kyoto champagne breakfast Hotel National Moscow top room service offering Claridges London 'a la carte'. I know the folks on this forum will have seen and eaten more than me, so I ask you... Where is the best breakfast in the world? |

Never had these, but can see what they are. I have a Japan trip booked next year so if you have any recommendations for Japanese breakfasts I would be v interested (maybe even making a special trip).
Unfortunately Onsen are not easy for me due to a lot of ink. |

I don't have one favorite breakfast, a few favorites from around the world.

What works best for a productive day for me would be a dinner-for-breakfast type breakfast. Steak and eggs, dim sum, a full European spread of smoked fish, pickled herring, sausages, charcuterie, cheese etc But I can never say no to local favourites such as dosas, Parisian croissant, scotch egg, a NY/Montreal bagel, steamed rice-noodle rolls from a hawker cart with hoisin and toasted sesame sauce, a shiao-bing or roti filled with beef or lamb, chives and egg from a hawker stand at the market.
I had the yummiest freshest made-to-order tacos at a beachside cafe in Belize once. |
A couple weeks ago my wife and I were on vacation in London. One day we had breakfast at the Wolseley. I had “The English”, which was quite spectacular. We also had breakfast at St. John Bread and Wine which was also wonderful. Had toast, butter and preserves, Scotch woodcock and a St. John donut. |

That does look like one I should try.
"Fried Haggis and Duck Eggs with a Whisky Sauce" mmmm Not sure if they had it at the Wolesley but years ago, on several occasions I had “porridge with” for breakfast at Gidleigh Park in Devon. It’s porridge (oatmeal) with single malt whisky on top. It’s a great way to start the day. :) |

I could totally go for that for breakfast. |

Ice cold pizza, covered in Sirracha sauce, then folded and eaten like a sandwich is my favorite breakfast. And I do mean folded like a sandwich, top, to bottom, not a typical NY-style fold.
