i might regret not sautéing an onion but I’ll survive.

Well I can cook and wash dishes all day but it is a matter of why would I? I would cook one thing for breakfast, one for lunch and one for dinner....take it or leave it. Everyone eats the same thing. And yes, a sauteed onion would fit in nicely.
I take it no one in your household has a cholesterol or diabetes issue.

This. The only times I cook more than one entree for a meal are when I'm meal-prepping (and I'm cooking several meals in a short amount of time) or for a holiday/special occasion.

I had some nice rendang, served on a toasted paratha. With fresh red dragonfruit for dessert.

Lunch

I’ve been asking my wife for some nice vegetable stir fry, and got my wish for lunch.

Fresh spicy green beans, with red bell peppers, onions, cashews and ginger. Served over rice. A nice light lunch. Just spicy enough to keep your lips tingling, but without feeling like your scalp is on fire!

Breakfast: Egg bites with bacon, onions, and cheese
Lunch will be the last of the chicken piccata and dinner will be chicken fajitas.

Dinner last night was fish (cod) and chips, but I passed on the mushy peas, having fresh peas instead.

good point about the hour for sous vide eggs - just some good prep. I’ll presume the muffins are prepped, potatoes shredded and prepped for cooking, etc - I’m just too accustomed for cooking eggs last since they’re “fast” so it’s just a big mental change. My guess is a big hay romp during the sous vide.

We are going over to our friend’s special outdoor luncheon today and birthday boy wants chili’s so I chose the buffalo chicken Sammie. Excited. I’ll think of kipper’s buffalo during this.

I make a half dozen at the start of the week, they stay perfect until you crack them. I'm also just terrible at making them properly so this is my idiot-proof method.

I made an egg sandwich for breakfast this morning. I should do that more often!
