This was Sockeye. I have been buying the King for the last several weeks and it has always been great. The King was $33.99 a pound this week. The price varies from week to week or even from day to day. The didn't have King Copper today; only Sockeye Copper. We'll barbecue it tonight and I'll squeeze some blood oranges over it and serve with the asparagus I bought today at Farmer's Market, a sliced heirloom tomato and gorgeous Gaviota strawberries.

oils & fat, the good kind. I'd urge you to get your "usual" salmon, then prepare your usual salmon and a piece of Copper River or other wild Pacific salmon, the difference in taste will probably astound you, it did me years ago & continues when I prepare for guests. (do NOT overcook !!!!, if you are well done burger or well done fish type guy, the difference will probably be lost to you)


my local shop (NW burbs of Chicago) was wild caught King Salmon for 7.99 filets or 4.99 whole. I'm smitten with this fish.

Nothing better than good salmon on the bbq. No words to describe how delicious this Copper River Wild Sockeye was....

Well I suppose I'll have to try this now...I'm thinking a nice pan sear until medium rare in the middle, salt, dash of lemon.

In the NYC area, the online grocer Fresh Direct has Copper River Sockeye on sale for $19.99/lb and Copper River King Salmon for $34.99/lb. Haven't gotten down to a local Whole Foods yet to check there.

yes, The small retail shop I speak of was opened by the largest processor of salmon & whitefish in the Midwest, this guy goes through the VOLUME assuring me of fresh seafood.

Buying from a wholesaler does a lot for lowering the price vrs a buying from a retailer like While Foods or fish monger specialty shops (most of which are in higher net worth/retail areas). This guy is across from an Aldi in a very blue collar town.

I recently took a cooking class from one of the fish monger shops in Chicago (Lincoln Park area), this shop had King Salmon for $19.99lb and most attendees thought it was a bargain at that price.

Most urban areas have shop(s) that allow one to buy from wholesalers, just have to find them.

Makes me wonder if Kings are preferred for the very willing to pay Sushi market? Then again the larger the cut the better it freezes for all year availability. This is money in the bank for them.

The Sockeye fillets at the local shop were obviously tail (perfect for a single albeit larger serving) So maybe the larger portions of sockeye are sold for sushi or perhaps as steaks (which IMO with skin on grill really nice and easier than filets)

BTW the lunch there today was fantastic. Best Salmon I've ever had. Probably a 6-8oz fillet with steamed veggies, rice and a fruit salsa for $24.99.
