oils & fat, the good kind. I'd urge you to get your "usual" salmon, then prepare your usual salmon and a piece of Copper River or other wild Pacific salmon, the difference in taste will probably astound you, it did me years ago & continues when I prepare for guests. (do NOT overcook !!!!, if you are well done burger or well done fish type guy, the difference will probably be lost to you)
my local shop (NW burbs of Chicago) was wild caught King Salmon for 7.99 filets or 4.99 whole. I'm smitten with this fish.
