Two weeks ago, we tried a new (for us) sushi bar, and the itamae handed me a sardine sushi without telling me what it was. Blew me away! I'd actually never had sardine sushi before, and I've eaten a lot of sushi. I do love fresh sardines too, as well as good sardines out of the tin. I never age them as some of the French do, but that could be interesting to do some day.

Grilled sardines in Portugal are delicious, but I grew up eating Club Des Billionaires ("Fish she is very small") sardines in oil right out of the can. Can of sardines + fork = happy Scarlet. Remaining sardine oil = happy cats.

Love the idea of having them grilled 
We have Hooligan in Alaska (smelt) and can catch them by the netfull... when they are in - can get a couple hundred if not a thousand in a couple hours... My dad smoked a batch of them and they are amazing... most recently threw them in an omelet ^

I watched an episode of Chopped recently that featured fresh sardines. It certainly made me want to try them. Of course as it was Chopped, there was also unsweetened chocolate as an ingredient
