I forgot about NWA's small 757 fleet. Delta was and still is the largest operator of the 757/767. But I'm with you that things were better before merger mania. The deck has really been stacked against the customer and despite being wildly profitable Delta's CEO is still trying to stifle competition. It's sad. 

45 -200's and 16 753's (DL never had 753's before)
I believe AA was bigger on the 757/767 front at the time.

My seat count is slightly different from yours as I'm seeing 146 in Y. Maybe you didn't count Row 39 which has only 3 seats A-C?
14D looks to be a great seat (currently occupied by me) since as you mentioned there is no 13D for whatever reason.
Also, 27A is listed as a preferred seat as there is no 26A.
It is odd that there are all on ATL>FL routes, since I thought the conventional wisdom is that those are low fare and low yield.

Could they be doing short runs for some type of expedited training runs? I seem to remember AF doing rapid turns from CDG to LHR with A380s for training purposes.

I'm also noticing that they still did not get who difficult it is to not have a front of Y lav. The mid Y cabin lav is better but still not like the 757 which prevents Y pax from ever needing to use the f lav.

I wonder if the space freed up by not having a seat 13D will instead be used for a flight attendant seat. It would make sense to have such a seat in an exit row.

Yes. Lots of quick cycles to build familiarity by pilot and FA crew. Keeping them hubbed out of ATL (only) at start keeps tech resources closer. DL is due to receive 15 A321s this year - there's plenty of short-haul / high capacity demand out of ATL to keep that few busy.

I remember a late Friday night in Dublin and all the ground staff wanted to get done work super quick, and so we disembarked and boarded through doors 1,2 and 4. I've never seen 195 people on and off an aircraft so quickly

I was curious about door 2L, and that it was mentioned somewhere that the jet bridge comes dangerously close to the engine.

I just flew on a refurb 319 in F and a 320 in Y. It's probably valid to assume that the interior of the 321 will be the same. Here are my findings and impressions.
In F:
The seats are comfortable, there was adequate leg room and under seat storage. The headrests raise. The tray table is unsupported at one end so they'll start to sag. The tray tables are on the small side. The recline is not like the existing 320's and there's more leg room so you don't have the problem of loosing all of your space. The aisle armrest raises. The pivot bins overhead provide much better storage space. Despite the diagrams, people didn't turn their bags up but there was still adequate space (flights weren't full). Mood lighting. The light control and air vent are tough to reach from the aisle seat. The F lav is large enough. I don't use the IFE so I can't comment about the services.
In Y C+:
The seats are comfortable, headrests raise, aisle armrests raise, adequate leg room. Underseat storage for the middle seat in Row 11 is limited by an IFE box (I didn't check other rows) . The aisle is narrower to accommodate the wider seats. Pivot for overhead storage. The lavs are TINY. They'll be a problem for large people. Most aisle pax won't be able to get to light / air vent without leaning over center seat pax.
321 engines are the same as the 319/320 and I believe the hydraulics are as well, so you'll have the same noises. The new 319 was a comfortable 3+ hour ride SLC-MSY (with noise cancelling headphones and my own music) and I imagine that the 321 will be fine for those routes as well.
