Oooohhh, just got a call from a delivery man - apparently someone sent me birthday flowers! Had to leave them with my downstairs neighbor though...now I'm going to have to run home for a couple minutes after rehearsal to pick them up because I'm super curious. :D

I mean, I ASSUME it's tjtenor4 since flowers get you more miles than anything else except actually flying...but it could be, you know, my parents or something. :p

Depends on the size of the cut. Smaller cuts will exhibit this to a lesser extent. A flank steak isn't going to have a lot of carryover. It also depends on cooking method. If you're doing a slow process, you won't have a lot of carryover either.

Also, I hate analog meat thermometers. Hate them. Really hate them. After wrecking a pork tenderloin 5 years ago, I got rid of all of them in my house. They're far too slow to respond, and I don't feel they're sufficiently accurate. I have two remote thermometers for smoking (one for the meat, one for the chamber temp), and one non-remote.

Or you just undercook the meat to allow for an extra 5 degrees or so rising. :-:

Cutting meat directly out of the cooking environment is a sure fire recipe for disappointment.

Thanks! Definitely out of the mid-twenties now. Not a particularly thrilling day, but a lot better than last year (taking my doctoral general exams). :)

House is wrecked but workers are finished and gone.
The paint crew ended up spraying the entire ceiling in the rooms where there was :rolleyes: damage. All the furniture\junk is now in a festering pile in the middle of said rooms. whilst there I am being a domestic god and dusting\vaccuming behind it

PM came by earlier today to check on status and the first thing he saw was the shingle wrappers on the front steps, I believe my yard will be much cleaner tomorrow :D
