Oooohhh, just got a call from a delivery man - apparently someone sent me birthday flowers! Had to leave them with my downstairs neighbor though...now I'm going to have to run home for a couple minutes after rehearsal to pick them up because I'm super curious. :D
I mean, I ASSUME it's tjtenor4 since flowers get you more miles than anything else except actually flying...but it could be, you know, my parents or something. :p |

No, it should be cut as soon as it comes off the cooking surface so as to halt residual cooking.

Resting is important for juices to be reabsorbed. It should also be noted that meats will cook an additional 5 or 10 degrees. So always pull your meat 5 to 10 degrees under the temp you want.
Also, I hate analog meat thermometers. Hate them. Really hate them. After wrecking a pork tenderloin 5 years ago, I got rid of all of them in my house. They're far too slow to respond, and I don't feel they're sufficiently accurate. I have two remote thermometers for smoking (one for the meat, one for the chamber temp), and one non-remote. |

His take on it was that a cut of beef will not cease the internal cooking process just because it has been removed from the broiler/oven/etc.
Cutting meat directly out of the cooking environment is a sure fire recipe for disappointment. |

I may just need to mail order it and save on the tax. Or, head up to Micro Center and pay 3.5% tax. Just need the time to work on the project.

House is wrecked but workers are finished and gone.
The paint crew ended up spraying the entire ceiling in the rooms where there was  damage. All the furniture\junk is now in a festering pile in the middle of said rooms. whilst there I am being a domestic god and dusting\vaccuming behind it PM came by earlier today to check on status and the first thing he saw was the shingle wrappers on the front steps, I believe my yard will be much cleaner tomorrow :D |
