My recipe uses a mixture of onions, garlic, lime and orange juices, cilantro, and olive oil. Half of that goes in the bottom of the dish, then the fish (usually use tilapia or something similar, sprinkled with kosher salt and freshly ground black pepper), then the rest of the marinade on top.
