Here, in this wiki post, I'll strive to explain what you should expect on AA flights in First and Business, meals-wise. Keep in mind that there are many domestic flights, so there are quite a few parameters to keep track of.
Basically, in its best condensed form, you should expect to receive a meal between 4:59am - 8pm on flights longer than 900 miles, which equals about two hours in the air. From that point, there are exceptions, and specific timing parameters.
What to Expect - Mainline:

All of the meal flights that fall under the above timing parameters will receive two choices; normally, one meat and one vegetarian.
Longer westbound flights leaving from the east coast (transcontinental; non-premium) are not officially exceptions, but some flights after 8pm receive a full dinner service (such as the 8:05pm MIA-SAN flight, or the 8:30pm PHL-LAS flight). Additionally, non-premium transcontinental red-eye flights will receive snack basket service upon departure, then a continental breakfast box prior to arrival.
Official Exceptions:
The following flights all fall under 900 miles, but will receive a full meal service, with the exception of flights leaving between 1:31-4pm. Despite some of the listed flights being over 900 miles, they are remaining listed here, based on the AA website for documentation purposes.

- 900-1298 miles: A meal (fruit/breakfast entree; salad/entree) followed by a cookie; no meals between 1:30-4pm
- 1298-2199 miles: A full meal including an appetizer, with cake for lunch desserts and premade ice-cream for dinner desserts
- 2200 miles and above: Same as 1298-2199 miles, but consists of made-to-order sundaes or a cheese plate for both lunch and dinner desserts

- Up to 175 miles: A light snack mix along with beverage service
- 176-899 miles: Sweet and savory, organic/healthy snack choices (snack basket)
- 900-2199 miles: Warm mixed nuts, two meal options, and dessert. (For flights over 2200 miles, you will receive the same selection of snacks from 176-899 miles as a pre-arrival snack. All regional meal flights leaving after 8:00pm will also receive sweet and savory snacks as the only option. Editor's note: A regional jet for 2000+ miles? Hope that never happens!)

Additional Information:
- JFK-LAX/SFO; MIA-LAX are considered premium transcontinental flights, and as such, receives a more refined service with three meal choices, per-course service, printed menus, and tray/tablecloth linens in both F/J. Those flights now are the only domestic flights in the system to offer special meals as another option (which can be reserved by either preordering online, or calling). Red-eye flights will receive a full "supper/snack" meal service, which is basically a condensed dinner service.
- Hawaiian meal service is very similar to what you'd expect on 2200+ mile flights, but there also will be Hawaiian rolls served, along with a pre-arrival continental breakfast/snack (dependent on the length of the route). Tropical warmed nuts are also currently served.
- All flights over 700 miles, regardless of a meal being served or not, will receive warm mixed nuts and a cookie.
- At this time, pre-ordered meals are not available on American Eagle flights.

One of the FAs on my DFW-SMF flight mentioned they've been having catering problems lately out of DFW, so perhaps v that has something to do with it?

(sorry mods - asked a generic question in the SPML thread, then figured this was the better place to ask -- feel free to delete that one)
Have the following choices to make, appreciate any suggestions. Prior to the frozen meal change, I always went for the HNML/AVML. Not so sure now. Can eat anything, not fussed about how big or small the meal is, just prefer something that has a bit of flavour and/or kick.

Service on this flight was very friendly, outgoing, and personable. Purser was proactive in offering drink re-fills throughout the flight and greeted each passenger by name when taking meal orders.
I was re-booked on this flight at the last minute, so I was unable to pre-order, though I still received my meal choice. Meal choices were either the beef bulgogi or a veggie lasagna.
Warm nuts, hot towel, and drink of choice preceded the meal. My choice of the beef was good. It came was asparagus and rice. The side salad had some sort of tomato dressing on the side. A nice welcome change from the vinaigrette on every other flight. Bread was offered from the bread basket. Chocolate chunk cookies (haven't seen these since pre-merger days) were offered for dessert. Mints were offered prior to landing.
Overall, an excellent flight, with excellent service from the purser.

Seems pretty standard for the last couple months. Unsure at the moment for lunch but based on posts here will go for the omelet for breakfast. Travel date is late Sept:

DFW-SMF is about 1450 miles and we got the appetizer, salad, entree, and ice cream for dinner. More than I expected on a midcon.
The cheeseburger was surprisingly good. The veggies were fresh, burger wasn't overdone and the bread was fresh. Condiments included, ketchup, mustard, and a chipotle mayo. Quite surprising, since I remember all the cheeseburger horror stories from UA. I'd get it again.

I'd LOVE if that's a recent change! When I flew DFW-SMF and return in the spring it was standard mid-con catering though. When I saw that trip report I thought it was a catering swap and they just used a packout from a long haul, but maybe it's a design change effective August?

I couldn't tell you to be honest. I haven't flown much this year, and this is my first trip in F this year. Other flights were short hops so it didn't matter much.
I'm heading home Sunday morning. SMF-DFW is breakfast do I took the omelette someone showed earlier. DFW-BWI is listed as much and I had a choice between a cheese enchilada and some weird A meal with quinoa, feta, tomatoes, cucumbers, and a chicken breast. I'm choosing the enchilada. I'm expecting typical midcon service, with just a salad and cookies. Bailey's at least goes well with a snickerdoodle.

And orange segments in the greens only salad to go along with 'bulgogi'?
Delta's cheeseburger is really tasty, but it doesn't come with chipotle mayo - just plain mayo in a packet. Is the chipotle mayo in a packet or is it in a bowl?

Using both the ketchup and chipotle mayo packet covered the burger pretty well. Didn't have a dry bite. Got a little messy actually so I was glad I had the napkin as a bib.
Should have taken a pic bit I wasn't thinking at the time.

Newbie to AA here. I don't see any meal choices for my YYZ to DFW flight for noon departure though I am pretty sure there is a meal. Is it too early to show up? Same with my IAH to ORD flight.
