off the beaten path and the places you mentioned in July seem to be exclusive of one another. Seems like you are picking popular places in one of the heaviest travel months.

Agree with SW...off the beaten path and France in summer...
..not a chance...me and mrs homerj just got back from france yesterday and the lines at eiffel tower/louvre/versaille etc. were appalling...even in the lovely little towns of provence the tourist hourdes were there..and this was mid may...in July....no way. Regards to gas pricing we had a small turbo diesel (ford max) and it costs us 85E in diesel to go about 1000km, so its not a wash its still more expensive than here. Sorry unlike the US were stuff is a bargain..the Euro has gone up with the $CDN and its expensive. Hotels were running us in the 300E/night range..you get the idea. I like one of the other posters suggestions of Argentina or Chile...cooler weather..great scenery not so overcrowded or expensive.

You also weren't that efficient with your hotels.
You were also at the biggest attractions in Paris.

I would take advantage of the favorable exchange rate (for Canadians that is, CAD being strong against the USD right now) and have a leisurely drive east on I-90 through New York State and Massachusetts to Cape Cod. Lots of fun things to hit along the way:
- Lunch on buffalo wings and/or beef on weck in Buffalo
- Explore the Finger Lakes region (and the wineries there
) - Attend a concert at Tanglewood in the Berkshires, have a picnic on the grounds beforehand
- Take the kids to Six Flags New England ("More flags! More fun!"
) just south of Springfield MA - Do the Freedom Trail/Museum of Science thing in Boston
- Then on to Cape Cod (or the South Shore of Rhode Island, or coastal Maine) for some beach time and the obligatory lobster

Do you really consider that a special vacation? Going from Ontario to NE?
I find US hotels horribly overpriced as well.
