Although I wish you all the happiness in the world and I hope your girlfriend says yes, I would still not want to witness your proposal. I'd be pretty p***ed off if I had to sit next to such a spectacle on my flight. (Not all people can marry the person they want in this country and it is never nice to be reminded of that.)
To the OP...
As a pilot, I think that's an awesome proposal idea.
Whether or not it's right for your G/F and situation is only for you to know.
Best of luck to you, whatever you decide! I can't think of a crew in the world who wouldn't help you if you decide to go the plane route.

I agree with what most people have said, and I don't think it should be done as a big spectacle on a plane involving the FAs, an announcement, etc.
But, a less-pressure scenario would be to propose on the plane privately, and (assuming your GF's answer is yes) see if your GF would want the rest of the plane to know about the special moment. At that point, you could mention it to the FAs.

Another vote for DON'T DO IT on the PLANE! I do see anything romantic about proposing or announcing the proposal on the plane.
I will offer some suggestions. My wife and I just returned from Oahu and I would go with either a sunrise hike up Diamondhead, or the Paradise Cove Luau in KO'Olina. It sounds like you have the bug to do it in public, and the Luau would be more fun. The family atmosphere would work well and the staff at Paradise Cove is awesome.

This is an AWESOME way to angle for an op-up. Next time I fly with a female on a long trip I am going to act this out and see if we can get op-ups.

I've seen this done on a plane
I was on a WN flight many years back (HOU-PHX) (when the seats faced each other), and with the help of the crew and an annoucement over the PA, a guy proposed. She said yes, and the whole plane bursts in to applause. The girl totally ate it up, and I could tell there was quite the anticipation to get to PHX and then...., but I would agree it depends on how your gf will respond.

the only time i would do it on a plane is in SQ or CX F AFTER a trip where i made several VERY suspenseful/suggestive moments, but did NOT propose. 
(of course if i had unlimited funds, i would hire thebluefish to charter the plane and hire actors to play the passengers

Here are some of my suggestions about where you can propose:
Byodo-in Temple - The temple is a place of awesome beauty, located near Kaneohe, Hawaii. It is a scale replica of a temple in Uji Japan built over 900 years ago. It's beautiful architecture , the graceful gardens and the backdrop of the Koolau Ridge will leave the visitor with a spirit of inner peace and serenity.

Hauula Loop Trail Not sure if you like to hike, but this 2 mile trail is one of the most beautiful hikes on the island. Since it is "off the beaten track" you will likely be the only people on the trail. The trail is well-marked and meanders through shaded pine forests. The walk takes 90-120 minutes and is not too hard every short walk uphill is rewarded with a downhill portion. Here is a link to some pictures taken along the trail (not mine...)

What i will do is take a private helicopter tour for 2 of us and ask the hotel on the beach to put a big sign in front of the hotel "Would you like to marry me?" that is an unbelievable experience which we wouldnt forget never. As for the marriage proposal on the plane... bad idea trust me
