things to do in Eastern Pennsylvania
What is there to do? We are going to drop our daughter off to a summer camp in Camptown (where the song comes from, really).
We thought we'd make a road trip out of it, a day or so to see what there is to see...which is...?

There isn't a huge amount in the immediate Camptown area, but there's a lot in eastern Pennsylvania.
Further southeast, Pennsylvania Dutch country.
North of that, the Delaware Water Gap area.
North of that, directly east of where you'll be, the Poconos resort area.
South of Camptown, the Little League Hall of Fame in Williamsport if anyone in your family is into that.
You'll also be close to some interesting places in New York State, so don't restrict your search to Pennsylvania.
Further southeast, Pennsylvania Dutch country.
North of that, the Delaware Water Gap area.
North of that, directly east of where you'll be, the Poconos resort area.

You won't be too far from the Grand Canyon of Pennsylvania.
As for New York, the Corning Glass Center or the Finger Lakes wineries may appeal to you.
Keep in mind Jim Carville's observation that "Pennsylvania is Philadelphia and Pittsburgh with Alabama in between."

The Amish visit sounds good. Camptown is in the far north not all that far south of Binghamton New York.

In addition to the excellent suggestions previously posted in this thread:
New Hope, Pennsylvania, is a quaint town (albeit somewhat touristy) near the point along the Delaware River where George Washington made his famous crossing.
Have fun at Dorney Amusement Park and Whitewater Kingdom near Allentown.

The finger lakes region of NY ought to be within an hour or two. It's great year round, but especially in the summer. Watkins Glen is a great place to spend an afternoon; likewise the falls at Taughonnak and Buttermilk state parks (both near Ithaca); and there's also several wineries in the area to tour and taste.

Not sure if Philly is in your plans, as you are not terribly close to the city.
I lived there for 25 years and still go back to visit family. If you do thing you'll be in Philly, email me and I can give you TONS of off-the-tourist-trail ideas.

Incorrect, my friend! The Camptown Race Song is from central Virginia - just outside Ashland, Virginia.
