In LCQ presumably being updated:

The cabin refresh work at HAECO at LCQ has concluded, and all future cabin refreshes will be performed at Aeroman in San Salvador. HAECO at LCQ will continue subsidiary Flightstar Aircraft Services at VQQ will set up and install JetBlue's seats, wifi, and IFE on new aircraft deliveries.

In SAL presumably being updated or heavy maint:

All aircraft planned to receive the cabin refresh have gone through the process, and the program has concluded!

N529JB was the "unknown" plane at LCQ that did receive a refresh. It returned to service on 1/3, so we now have our 10 initial refreshes.

632 is back in service as of 1/15.
Next up are 653 and 510.

729 is now being modified with phase 2

Doing some searching, N629JB also returned with a cabin refresh on 1/28.

N633JB arrived at LCQ on 1/28
N659JB arrived at LCQ on 1/29

N775JB (Veterans scheme) left LCQ on 1/29. Although the flight load shows a capacity of 150, it could be possible that Sabre hasn't updated yet since it returned yesterday. It's also possible that it did not receive a cabin mod as it had not been at LCQ for the typical length of time needed for a cabin mod.

So, there's at least 5 that we know of currently at LCQ.

I haven't been looking at SAL, but N661JB arrived 1/23.

N779JB (Bluericua) left LCQ on 2/13, after 9 days, so no cabin work was done on this one.
N633JB (Brooklyn Nets) left LCQ on 2/13, after 16 days, highly unlikely that it received cabin work, and the inventory still shows 150 and not 162.
N657JB arrived at LCQ on 2/14
N715JB did a test flight at SAL on 2/18 and then flew to JFK. Since I didn't see it go to SAL a week and a half ago, it probably wasn't there for long. Inventory still shows 150, so I don't think cabin work was done on it.
N593JB was sent to SAL on 2/19

I haven't actually checked in a while, but N729JB did a test flight on Thursday, so the Phase 2 cabin might be entering service soon.

Good news. N729JB, with the Phase II cabin was released today. Flew LCQ-BOS. Will be ferried to MCO in the morning for entry into service on MCO-SJO at 8:49AM

534 and 598 (Bluemanity) are in progress for Phase 1.
763 (Retrojet) is in progress for Phase 2.

Interesting, so they're still doing Phase I even though they've started Phase 2?

EDIT: I figured out why. LCQ is doing Phase 2 while SAL is still doing Phase 1 although they will be switching over soon.

Interesting. I didn't think they were doing refurbs in SAL.

I thought perhaps the older half of the fleet (503-665) would get Phase 1, while the newer A320s (703-834... with the newer interiors and touchscreen flight attendant panel) would get Phase 2. I certainly hope Phase 2 goes fleet-wide.

N534JB finished Phase 1 mods and is in service as of yesterday.

May I ask why the airline has two different interiors? Wouldn't it be simpler to retrofit all the 320's with the same phase 2?

Waiting for phase 2 to be ready would have delayed the whole process significantly. They would just be starting modifications now. Better to have 20 planes already flying with a better product as they go through their regular maintenance check schedule rather than dragging out the process. The phase 1 is very similar to what is already flying on the A321s so it is actually just fine to have phase 1 for most routes within the US. Phase 2 will be most noticed for international flights where the internet connection will work instead of cutting out once over the ocean.
