If you are connecting, see if you can take the 9AM LH flight DEL-MUC (munich) and connect to EWR from MUC.
MUC is probably one of the best airports in that part of the world for a
connection.
EWR is better for immigration/customs compared to JFK.
An advantage of this is that its all daytime. Will be a lot easier on your mother to not wake up at 1Am to catch a flight.
Here is the option:
Delhi (DEL) to Munich (MUC) -
Lufthansa 763 Dep: 9:40am Arr: 1:35pm 8h 25m Airbus A340
Layover in MUC 1h 50m
Lufthansa Munich (MUC) to Newark (EWR) -
Lufthansa 412 Dep: 3:25pm Arr: 6:35pm 9h 10m Airbus A340

back to the OP (though i must say the OT was very entertaining).
i agree with PVD on ZRH and MUC - love those airports - a breeze to transit through
a couple of things you want to consider
1) is your mother more comfortable in a non stop 15 / 16 hour flight or prefer a break in between
2) meals - from all otehr accounts it seems like AI will offer better Indian options - on a Eurpean carrier while you will get Indian options on the first leg, you must specifically request special meals for the second leg if your mother is particular
you also asked in AI - seat selection can be done at the time of booking on the AI site (even before making the payment - so in case you dont like available seats, cancel before reaching the payment page)

As for me i prefer a non stop as it will get me to my destination about 7 hours earlier
2. She is particular about veg food and so am i.. So food will be an important factor too..

I guess its a toss up between AI non stop and LH through Munich..
Can i use my Ai miles on LH and vice versa???
And do i book my seats on LH before making the payment as is the case with AI or is it when i check in?

EWR is strictly preferable to JFK for anywhere in Jersey and weakly preferable for Manhattan. However, if there is a large difference in cost or much less convenient timing to EWR, just go with JFK.

No clue how seat comfort is in economy, because I got an OP-UP to Comfort Class due to my *G ^^, but fellow FTers have said that it's good. Comfort Class is affordable and really good, and I strongly suggest it.
Connection in IST is slightly disorganized, but I liked it. Not disorganized in a horror-causing way like BOM, but disorganized in the way that made it feel like home, but still getting things done. The lounge is the best *G lounge in the world IMO, (and if you credit to A3, you might be able to visit on the return
)

TK sells their product based on their food. It is catered by Do&Co, which is in my opinion the best airline caterer in the world. When I flew IAD-IST, there was 1 veg and 1 non-veg option. Not sure how the special meals are if you want to order, but standard meals are GOOD.

have confirmed with tk....comform class is not available on the del-ist & ist-del sectors....
connection is good on the way to jfk but on the way back there is a very long layover....almost 10 hours....

While it has been a while since I have been there Istanbul is a very nice city and easy for people, including a Woman and her Mother, to get around safely. Is this 10 hour layover during the daytime? If you were to arrive and have time to enjoy maybe a shower in the lounge and then go out for a few hours in the city for walking around and have a meal you're golden.

If I recall correctly, the IST-DEL flight departs around 7 PM, so that would mean that it arrives around 9 AM... I personally would love a connection like that, it gives you the chance to see the city.
