Incidentally, I much prefer being given a voucher at check-in because it eliminates any guess work on what it includes and eliminates a potentially awkward exchange with your breakfast server about what the Diamond Breakfast benefit includes at this property (some don't know)

I always leave $4 or $5 cash behind when I use a certificate whether its a Hilton or Hyatt Diamond breakfast benefit. To me that is standard breakfast tip for one person and it seems to be sufficient enough to elicit a warm welcome from servers on return visits. I am also the type that add 2-5 extra when ordering room service even thought the Service fee is certainly adequate.

At PH Seoul, I was presented with a bill to sign for the fixed price breakfast buffet every morning, but it never appeared on my final hotel bill. I don't think there was a line to add a tip, which would have been very surprising for Korea.
In the USA, if I'm given a bill for breakfast, I'll add an appropriate tip. It always has disappeared from my final hotel bill. Otherwise, I don't tip cash at breakfast because of reimbursement rules, because I don't like the idea of encouraging under reporting of tips to tax authorities, and because I believe that the hotel is contributing normal tips for this service. These tend to be buffets, where I would normally tip less than for a served meal anyway.

I am already getting tired of having to argue about this with FD personnel upon checkout. Just checked out of a stay where I left perfectly reasonable tips at breakfast both days (18-20%), and the associate insisted on arguing with me. She flat-out said "It's not" repeatedly when I informed her that tip was included in Diamond breakfast. Why can't Hyatt be consistent about this?

I stopped writing "included" on the tip line after one of the waiters complained about this. Not sure what they get but lately filling in the tip line with the proper amount was always removed. Maybe it is just a few properties where they challenge that.

They charged me at the Hyatt Highlands Inn this weekend. I left $5 both days and they charged me $10 at checkout. This is the norm I find. A few hotels take it all off, but I frequently get charged the "tip" I leave. Since this is only at places with a restaurant, I don't even bother fighting it. Way too much hassle for a few bucks.

I understand your thinking, but I really don't have the luxury of being able to just write off $5-10 25+ times a year, plus it is just a matter of abiding by the stated T&C.
