I wonder if using the air-conditioned underground walkway from Central Station will be more comfortable and will not take too much extra time?
If don't want to walk and on the cheap, take bus #15 on Queensway, just outside Pacific Place and alight at Exchange Square, HK$3.60, assuming OP is travelling light. Bus every 15 minutes.
Bus #621 operates during morning rush hours except Sundays, so should work for OP too. Board at same place and alight at Man Cheong Street stop to Hong Kong Station. Single fare HK$5.70.

Why not take the E11 to the airport?
On second thought, OP can take the E11 bus to the airport, also on Queensway outside Pacific Place.
I would allow 60~70 minutes or so for the journey given OP will be travelling during the peak morning rush hours. There is a bus every 15~20 minutes.
Single Fare = HK$21.
This will give OP a "scenic route" to the airport.

Now, you guys are starting to talk about alternate ways, let me suggest the following. Zero walk. Fairly quick, and still cheaper than Airport Express.
Go down to the main entrance of Pacific Place on Queensway, and take any of the 96x buses. That includes any 930, 962 and 969 series from Citybus and any 960/1/8 series from KMB. [Not 905 as that's much slower.] No more than $22.7, and with 6+ routes, the wait should be under 5 minutes. Take about 15 minutes to get to the Western Harbour Crossing stop.
The nice thing, even with the extra cost, is that you can then catch A10/11/12 to airport from there for $33 and about 25 minutes. Because of the combined frequencies of both sets of buses, wait shouldn't be too long. No walk, no tour of Chek Lap Kok and still costing no more than 60% of the train, and most likely less.
Not saying the best way, but a possible alternative.

It reverts back to why some recommended the W over the Conrad. W is atop the Airport Express Kowloon Station and is attached to the Element Mall and the Ritz Carlton/Sky100. However, they may not offer "the things" that OP may be looking for a brief overnight stay.

i believe a 30 minute cab ride or a bagless metro ride would bypass the traffic well enough - or i suppose a bus-bus transfer is equally convinient...

Route H1 calls at Conrad every 20 minutes from about 6am to 11pm. If you just miss one and do not want to wait 20 minutes, just walk over to the taxi rank which is on the same level, about 50 metres or so. You need the boarding pass from your arrival flight and the AE ticket to board the bus. So don't throw them away until you reach the hotel, or keep the tickets to deposit them in the special collection box at the airport on departure to recycle them if you're environmentally conscience.
Check with the hotel concierge on the time that the bus calls at the hotel. You can take the bus to Hong Kong Station.
As there are more than one of you travelling together, ask for the Group discount tickets on the AE train.

who are you flying with (onward from HKG). CX allows checking in bags from the calendar day before departure at the airport and AEx Station, and a few airlines allow checking in at the train station the day before even for US-bound flights.

These are special dedicated buses for Airport Express passengers with space for luggage.

The luggage space in these shuttle buses can fill up fast and some folks will then ride standing and holding their big old suitcases, and so the bus can get real cramped. Not to mention there may be 2 or 3 stops before your hotel. On the other hand, taxis are fast and they're so cheap in HK.

True, the bus served several hotels but it is a circular route to both drop off and pick up passengers. Unless one is in a hurry, it's usually fine.
Depending on the time of the day, the queues for a taxi could be up to 20~25 minutes although taxis are usually plentiful.
I usually keep an eye on the taxi queues as I walk over to the shuttle bus stop. If the wait for the shuttle bus is longer than 10 minutes, I would walk over to the taxi rank provided the queues are not too bad.

If you do not want to take your bags to the hotel, you may check them in at the CX counter at Hong Kong Station.
Otherwise, just go directly to either the Airport Express complimentary hotel shuttle bus counter or taxi rank to hire a taxi to Conrad.
