At any rate, I'm using pumpkin. Pumpkin pie mix has a lot of sugar in it and therefore wouldn't be low carb.

What do you use to sweeten your canned pumpkin in order to make a pie if not brown sugar? I assumed that you were not using pumpkin pie mix because it looks like you make things from scratch.

Splenda. I'll let you know how it turns out.

it didn’t taste as bad as it sounds, when not sober. If I eat it while sober, I’ll report.

hmmm. yes do report. I know the point of sugar in baked goods is not just to sweeten but also to add moisture. I assume this is special splenda for baking so it doesn't give a weird taste when heated.

Google, my friend, Google. Hint, the first ingredient is carbonated water.

Your dishes always look so good, but the portion sizes would leave me starving lol. Unless maybe there was a big salad ahead of it...

Antipasti while cooking followed by a low(er) carb beef burgundy with cauliflower mash on the side.

Could totally go for the crust less pumpkin pie mentioned by iluvparis above, but will need to settle for a piece of dark chocolate instead.

Didn't prepare this myself (apart from calling in the order) but delicious Steamer platter at the Outer Banks last week. Scallops, shrimp, lobster, snow crab, corn, hushpuppies, potatoes, onions and cornbread (not pictured). Hard to beat a feast like this -- at least if I'm grounded, it's nice to explore some areas of the NC coast I've never visited (and appreciate that NC has beautiful beaches and delicious seafood within 3-4 hours of the RDU area).

I did a rare takeout dinner...Amex promo for supporting small businesses....Local Mexican small chain that I have been going to for over 20 years. Home made chips and salsa, Carnitas with rice and beans and flour tortillas and guac and pico de gallo. And a Blue Moon. I am in hog heaven.

To continue the theme, made tacos and refried beans for the first time tonight in a long time.

Only annoyance was that every one of the taco shells (I was too lazy to make my own and didn't want to smell up the house with frying) in the box was broken.
Thus the tacos became chalupas

Enough leftovers to make nachos

gaobest Sep 12, 2020 10:53 pm

tartine toast!
cream cheese & strawberry jam
matcha milk jam
butter
toasted coconut almond butter
cream cheese & cherry preserves

No, regular Splenda can be baked. I was pleased with the result.

Not a fan of soft tacos?

cblaisd Sep 12, 2020 11:19 pm

I also belatedly realized that I had no corn or flour tortillas in the house. I was ill-prepared :D
Yes, a good corn tortilla is a thing of beauty :) But I was also wanting "crunch"

Flour and corn tortillas are now on the grocery list!

we love tacos both hard and soft. We have hard corn shells, plus soft corn and soft flour tortillas. All yummy.

fan and air purifier? Or open windows when the air is ok?
ive never fried a corn tortilla so don’t know how intense the scent would be.

i always have windows open and ceiling fan going....odors stay in my house. I fried fish a couple days ago and still get a bit of a whiff. Most things...not just tortillas ...leave an odor. It isn't a bad one...it just is there and frying is messy.

Ugh, I love fried fish and a good tartar sauce, but the smell doesn't go away fully until you find and eradicate every last drop of oil that escaped. You made me want fish and chips now, but not sure that's going to happen this week.

salad with little gem lettuce, dried hatch chilis, slivered almonds, dried cranberries with Trader Joe champagne pear vinagrette
new recipe from the NYT---crispy brussels sprouts and crispy gnocchi with brown butter. I added a little bacon & called it dinner.

Crab cakes with homemade remoulade sauce and cocktail sauce
raw radishes
grilled cheese with raw carrots
tartine toast with assorted spreads

alden’s ice cream sammie
bowl of Haagen Dasz chocolate and Robbins rocky road
bowl of Jaimito, Biscoff, and Haagen Dasz vanilla

Jaimito Cartero Sep 14, 2020 10:58 am

My wife made some beef and broccoli that I’m going to chow down on soon. Looks pretty good.

Beef and broccoli looks great!

I am pondering what to make for dinner tonight...probably our last Green Chef, a couscous bowl with feta and veggies.

Broiled steak
“patty melt” with sharp cheddar on toasted sourdough
oven steak fries
baked potato
roasted carrots / Brussels sprouts / zucchini
roasted beets
sauteed onions

some of this will make great leftovers for Tuesday :-)

yeah it was good flavor but not great. I definitely liked that i added bacon. Maybe would use more lemon zest and would add garlic. I used about half the amount of butter. Trader Joe potato gnocchi . I think the dish could have used something liquid like a sauce.

I made a pea soup last night. It was ridiculously simple, just leeks, onions, chicken stock and peas. Tasted really good. I'll probably do it again.

fantastic! How long did it cook?

I just let the leeks and onion sit in some butter in the pot just to get tender, not to brown. Then I added the chicken stock and brought to the boil. Once boiling I added the peas and simmered for about 4 minutes. Then in went the immersion blender to mix it all up. The whole thing took about 15 minutes from start to finish (including cutting the onion and leeks!).

Frozen. If I'm being honest, when it comes to peas frozen > fresh 99% of the time, imo.
