When I grill them, it's salt and pepper, garlic powder, and cayenne. Then lightly sauced. If I use Frank's Hot Buffalo, I skip the cayenne. It's hotter than Frank's Red Hot or Frank's Buffalo IMO.

To the poster who mentioned BW-3...I think that's where a lot of us fell in love with wings. It's not the same place now as way back then. But one thing I love there that's better than anywhere else is the Spicy Garlic sauce. It's not that spicy, but it's really good. When I occasionally order from there, I'll get half Spicy Garlic and half Hot. I can't do the Wild any more!

Last night, fish cakes (like crab cakes but with white fish) with a lemon pepper aioli.
Tonight, ground pork "egg roll in a bowl"

I also began an 8-day ferment on a bunch of excess chile peppers from our garden. Onion and garlic as well, eventually it will be homemade hot sauce. I'm guessing it will be blazing hot, but we'll see.

Grilled chicken ala braslvr - alas even at low/medium setting, the grill got fiery and skin blackened! Chicken was still super amazing and I didn’t bother with any bbq sauce or sauce. I really love this chicken mega much. I feel such love for braslvr.

roasted carrots & onions
mashed potatoes (both Yukon & russet)

I really loved this!!

Buy a new grill for chrissakes. :) I can't believe you cook on that thing.

Could I just get new grates? Is it just the case of measuring the current grate and doing an exchange?

Or use a pressure washer to clean them, but then coat them with a little food grade oil to prevent them from rusting. All that ash and residue could get you sick, especially if you cook other meats besides chicken.

I can't even imagine what it looks like under the grates. Honestly, I've never seen anyone cook on a grill that dilapidated. Buy a new grill. It's time.

clean the grates, but more importantly take the grates off and clean what is inside - flare-ups will be reduced

I hope you remove the skin before eating that chicken! I will not eat excessively charred food.
