Last night I made Green Chef. We had roasted barramundi with an olive, roasted red pepper, and lemon tapenade, and a salad of kale, tomato, and roasted sweet potatoes in a goddess dressing.

cblaisd Apr 10, 2020 2:24 pm

This will be tonight's dinner in a few hours.... plus bbq beans with sausage, and homemade whole wheat corn muffins.

I made NYT's Honey and soy glazed chicken thighs and served over rice. So delicious, though the instructions ensure burnt raw chicken. The sauce is to die for. Can't wait to try it on chicken on the grill and perhaps, pork chops. Then, for dessert, the NYT recipe for olive oil brownies with sea salt.

PsiFighter37 Apr 11, 2020 4:24 pm

Tonight's dinner is slow-cooked chicken and sausage gumbo cooked overnight - easy recipe from Allrecipes.com. Very tasty. Dinner in a couple days will be classic pressure cooker beef chili from NYT Cooking, using dry-aged American Wagyu ground beef.

cblaisd Apr 11, 2020 4:54 pm

Leftover bbq, plus spouse's homemade vanilla ice cream :)

Herb687 Apr 12, 2020 5:22 pm

About to have a lamb shank that I've been slow simmering pot roast style.

BamaVol Apr 14, 2020 4:25 pm

Easter leftovers. Pork tenderloin stuffed with garlic (12 cloves) and rosemary, butternut squash seasoned with cumin, cayenne and coriander (cubed, sprayed with olive oil and baked) and green beans with garlic and basil. I tried to make gravy but almond flour as a thickening agent was a pour substitute for wheat flour or corn starch and it was too watery.

Fragola Apr 17, 2020 1:04 pm

After a big restocking trip at the grocery store I made a grilled tenderloin steak with sesame sauce, truffle oil sauteed mini bella mushrooms, carrot slaw and lemon grilled asparagus. My most elaborate meal in a while.

Lol...another clue:
Grilled pizza with pancetta, goat cheese, roasted tomatoes, and topped with arugula.

miamiflyer8 Apr 20, 2020 9:36 pm

Salmon fillets from Costco, potatoes and sautéed spinach.

Fragola Apr 21, 2020 4:03 pm

Leftover asparagus mushroom risotto mixed with shredded cheese and stuffed into bell pepper halves, then roasted.

sushanna1 Apr 21, 2020 4:45 pm

Leftover meatloaf, leftover roasted new potatoes with rosemary and roasted cauliflower.

lhrsfo Apr 22, 2020 7:31 am

Fish cakes (homemade with gf breadcrumbs) and frozen peas. Followed by rhubarb polenta cake with clotted cream.

BamaVol Apr 22, 2020 10:14 am

Last night: NY strip, 2” thick and lightly grilled. Grilled asparagus (thick stalks). Baked potatoes.

Tonight: mahi-mahi on the grill, grilled bi-color corn, Brussels sprouts steamed.

I hope you're eating outside since you're stinking up the kitchen. :D The last time I made them, I did them in the slow cooker, but put it in the garage. When my partner got home, he wondered why the garage smelled like garbage.

Tonight I'm making tagliatelle with prosciutto, parm and butter. I hope the aroma is a bit better.

Fragola Apr 23, 2020 11:27 am

Last night I made pastitsio for the first time. I didn't have canned diced tomatoes so I blanched, peeled and diced fresh tomatoes. Actually my goal was using up the case of fresh tomatoes I overbought and this fit the bill. Bechamel sauce goes on top of pastitsio which I also made for the first time and I was licking the spatula. Butter does make everything taste better.

USA_flyer Apr 23, 2020 12:15 pm

For lunch I made a potato and leek soup in the soup maker. Wife like it, daughter preferred the previous attempt that was a bit runnier.

For dinner I used left over roasted chicken to make a chicken tikka masala. I confess I used a jar for the sauce, I dont have the patience to make curry from scratch. Maybe one day. Sided with boiled basmati rice and a plain naan (also store bought).

corky Apr 24, 2020 10:04 pm

Grilled Costco baby lamb chops
haricot vert with goat cheese and pecans
Grilled smashed new red potatoes.
Pinot Noir

My wife and I had Shoulder Pork Chops broiled with Lawry's Garlic Salt and Freshly Ground Pepper. She had me add some Kikkoman Soy Sauce and Squeezed Lemon to hers. Also some frozen asparagus steamed in it's own package with some whipped butter on them for taste.

gaobest Apr 25, 2020 1:29 am

I grilled cheeseburger sliders for supper; super yummy. Also baked more chocolate chip banana bread.

I need to buy a small deep fryer to make future French fries - oven baked fries just aren’t the same!

we had cheese pizza on Thursday night - we buy pizza dough by the individual bag but I’m toying with the idea of using our flour to make dough.

I am giving serious thought to getting an air fryer. Similar result to a deep fryer but less dangerous.

I just need to persuade my wife we need one. If I could bin the Tassimo, there would be worktop space for it.

I tried making Ore-Ida Shoestrings in my air fryer the other day. They came out very soggy, not crispy at all. I will not use it for French fries, but the fish sticks and chicken wings came out great.

PsiFighter37 Apr 25, 2020 4:56 pm

Last night was scallop gumbo and pureed mushroom soup (both from NYT Cooking). Going to repeat some other recipes for dinner in the upcoming week.

do you think your air fryer is better than a deep fryer?

We took a kids’ cooking course this evening, with parents helping. Chicken piccata and chocolate lava cakes (the Food & Wine recipe). Super yummy and we had fresh angel hair pasta to go with the piccata. I’m excited with this new dish!

we will make cheese pizza on Sunday supper and I’m going to try those japanese fluffy pancakes for Sunday brekky.

USA_flyer Apr 26, 2020 11:23 am

Gonna pan fry in olive oil yellow fin tuna steaks to have on top of toasted focaccia bread. Sides of asparagus and broccoli.

I did a seasoned lemon drizzle for the focaccia. Deeelish!

Cheese pizza - I used frozen dough from a grocery store with Rao’s pizza sauce and low/skim mozzarella. It’s really so good. I still crave deep dish but I’m extremely satisfied with our thin crust pizza

Halibut was on sale (it almost never is). So...

Halibut grilled over hickory, seasoned with olive oil and lemon pepper
Grilled mixed vegetables (asparagus, onion, green pepper, sugar snap peas) for Mrs. cblaisd (not a fan, myself)
Cranberry-walnut batard bread
For desert, Mrs. cblaisd's homemade vanilla ice cream and chocolate brownies.

Enjoyed while watching the series finale of Homeland.

USA_flyer Apr 28, 2020 3:03 pm

I had Domino's pizza.

It was bloody awful, to the point I asked the missus to stop me ordering from there again if I suggest it.

They are just miniature convection ovens that are too small. You can get similar results using a regular convection oven.

edit: but if you insist, there is a deal today for $50 for a Cuisinart air fryer. https://slickdeals.net/f/14015549-cu...?src=frontpage

Depending on the cheesesteaks, that sounds delicious.

I cooked a turkey and all of the fixings (green bean casserole, mashed potatoes, stuffing, cranberry sauce, gravy, and biscuits) on Sunday, so we had leftovers last night. After having leftovers on Monday and Thursday, we have enough turkey for lunch for one, although we still have plenty of the fixings.

Smoked haddock and spinach risotto. Wonderfully rich and creamy. The problem will be the wine pairing.
