Leftover homemade gumbo and white sushi rice
(I told my husband the other day that he didn't realize how many things I silently compromise over, and as an example I mentioned that I dislike basmati rice. Sushi rice is far superior in most dishes. But we buy 30 lb bags of basmati rice and never make sushi rice. So lately we've been having sushi rice. :) My ultimate preference would be brown rice but, at least I'm eating my preferred white rice.)

Was going to make spaghetti but tossed in a few too many ingredients into the sauce so after reducing the water in the mixture, it actually became a stew of sorts... wasn't too bad. Especially with some toast.

I was on board until the toast. No Italian bread for the planned spaghetti? No frozen biscuits to go with the unplanned stew?

Unfortunately not. Regular bread was all I had on-hand (well, that and a frozen pack of roti prata). Was only considering spaghetti as that was the only pasta I had handy. Work has been crazy as of late so my pantry has been getting a thinning... besides, regular toast isn't too bad an application for this. It sops up the stew just as well and I actually finished the loaf as well (which is a bonus).

I managed to grab a Too Good to Go bag from one of the fish stands at the farmers' market and am now apparently making skate for dinner (for the first time in my life--I think I have only ever eaten it dried as a drinking snack in Japan). Let's see how this goes!

Skate wings are excellent table fare! Prepare like you would any other fish.

Love skate... My only beef is that the bones are segmented way too much (but that's not the fault of the fish). If you go to Singapore or Malaysia, order the BBQ stingray (that's how I like it anyway).... can pan fry it or grill it. Haven't tried steaming it, but in theory it should work.
