Tonight seared foie gras paired with a lovely local Late Harvest Petit Manseng as well as seared venison medallions with black truffle mashed potatoes paired with a 2021 Kirkland Saint Julien and both enhanced by a 10 yr Tawny Port/Aged Balsamic reduction.

Tonight- Seared Foie Gras on top of a seared Filet Mignon and a Marsala Cremini Mushroom (didn’t realize I was out if Madeira) pan sauce made after the foie pan after it was seared. On top a Black Summer Truffle slices. Paired with a 2022 Kirkland 2022 Chateauneuf de Pape. Will be improving on this concept over the next few days

Costco prime ribeye boneless steaks - $19.99/lb - I bought the cheapest package which was 2 steaks of different thicknesses. My wife prefers medium rare plus so I googled and did the sear and bake in the cast iron. Now I’ll google how to clean it because I rarely use the cast iron.
