My non-alcoholic drink is always tomato juice, especially in the morning. There is just something about it. On side note, tomato juice with a Denver omelet with cheese is perhaps my favorite breakfast. I am afraid to drink water or coffee en route. I have seen far to many people get sick.
My alcoholic drink of choice is Sapphire gin with a slice of lime and one ice cube (to much ice is terrible for your drink). On the ground my drink of choice is a Sapphire martini with 2 blue cheese olives. (The blue cheese olives are fantastic when they soak in the gin and vermouth)

I have always loved cranberry (or cranapple) juice as a non-alcoholic choice, but as I have gotten older, my digestive system has increasingly disagreed with that choice. I usually stick with water (or on the brave occasion, apple juice) if I go non-alcoholic.
For the booze, as a UA flyer I pick the non-Goose Island craft beer they have. Recently, that is Voodoo Ranger IPA (a solid choice), although I did enjoy Lagunitas 12 of Never Pale Ale as well. If it's a longhaul flight, I will go with wine options, as that tends to work better (for me) at higher altitudes than beer does.

Not a whisky connoisseur by any means, but I really enjoyed the 17-year Hibiki on ANA J. Much better spirit selection than JAL J.

Lots of interbnational flights
Champaigne while on the gound if I do not plan to work
Cherry juice, but I have only found it in Turkish. Otherwise tomato. Juices always without ice -- I do not know its pedgree
If the airline is suggesting a wine, and the write up is well done, I will try it
Baily's Irish Creme
No carninated beverages
And no more than two alcholoic beverages

Drinks
Non-Alcool:
Room temp water, of course
Ginger Ale, otherwise I don't drink soda.
Alcool:
"True" Champagne
G&T
A nice wine, wholly dependent on what's on-board, red or white. #winesnob

I almost never drive at the end of a flight and mostly fly long haul, so usually take full advantage of the drinks if they're free.
In economy, water, white wine with meals, brandy and orange to knock me out.
PE/Bus. depends greatly on what's on offer.
International F (never done US internal F)
Champagne
Appropriate wine with courses, port to finish if available, otherwise grand marnier / brandy.
Than back on Champers or possibly one of the red wines.
Bloody Mary with b/fast.
Coffee, tea and beer all seem to taste bad at altitude, but I'm looking forward to trying Cathay's Betsy beer soon to see if it is the exception.
Miso soup is nice in the air, I wonder if anyone has ever considered offering it as a beverage option?
