Salt and black pepper. I can't understand why it's a 'niche' flavour, much nicer than salt and vinegar.

I'm not very sophisticated when it comes to chips (crisps)

In the UK, another vote for the Salt & Balsamic Vinegar Kettle Chips, and the newish Walker's 'baked' salt n vinegar. I also like the 'Real' brand (our local pub sells them, most flavours go well with a pint!). In the US I like Lays bbq or honey bbq and the kettle cooked mesquite bbq ones. Here in the UK bbq crisps are very meaty, but the Lays ones taste more like bbq sauce.

Tyrrel's vegetable crisps (parsnips/carrots/beetroot, etc) are nice but VERY greasy and cost a lot too.

Ohh that reminds me of the Phileas Fogg Punjab Puri crisps - ohhh they were seriously good! My father was a huge fan, and there was often a bag on the go (he would have a small handful as a pre-dinner snack, often with a glass of wine or beer, but mother has curtailed his habit after some none too favourable cholesterol readings!) Can you still get them, I haven't seen them in years!

Salt & Vinegar or Sea Salt. Any kind are fine with me.

Tangentially, I recently discovered Snyder's Hot Buffalo Wing Pretzel Pieces and I am totally addicted.

Ooh, I forgot to mention PopChips, which are kind of like potato chips, only much lower in fat and 90% as delicious.
