All this food talk. I made a NY cheesecake this evening and appears something may be wrong. I followed all the rules (room temp ingredients, no overblending or overcooking, water bath, etc). After 1.5 hours of cooling in the oven, it is still a bit jiggly. Not sure if time in the fridge will help.
Seems the last time I made a cheesecake 10 or so years ago I followed none of those guidelines and it came out great. :rolleyes:

I make cheesecake fairly regularly (one of my go-to bring-to-party items) and an overnight in the fridge really does do the trick. Also, if you use a springform pan, you're generally OK without a water bath.
It was really hard to tell what was best practice from the websites I visited... I almost didn't do the water bath (I do have the springform pan). I will let you know if it turned out ok on Saturday after we try it out.. or not.. :D |

Also, I see that you keep talking about these huge orders....I thought you could only order $500 of each president every 4 months. What's your secret?? Finally, all NY/NJ/PA residents, and people thinking about coming to the great garden :rolleyes:, The Steve GadFly band (aka Stronger Than Dirt has got gigs in Woodbridge, NJ and Freehold on 9/4 & 9/5 respectively. That's right BEFORE the AYCJ pass on Jet Blue starts so that's not a valid excuse :p. I'll post details and links in Teh Box tomorrow but I thought I'd let y'all know so you could put it in the back of your mind. On that note, G'night Box. |

Re: coins -- I'm wondering the same thing about the Prez. You should be fine w/the $2500 deposit. I don't take more than that per bank.
