I have looked into the transaction further, and I think I am SOL.
The purchase had been made on June 29, but the transaction date on my credit card reads July 1, along with a posted date of July 2.
The nature of the transaction is in fact an organic spend. Yes, I could have transacted a few days earlier, but it had fallen through the cracks as I had been traveling back and forth between Asia and Europe.
Did not think it would take two days (actually three days) to post. Not a huge amount, but lesson learned.

I am just now logged into my Paypal account - the receipt there states "You'll see "[merchant name]" on your card statement on June 29, 2018".
I think Paypal may have delay processed the charge. It has July 1st as the transaction date.

While the "such as" examples don't apply in this instance, they are not exhaustive. Any reason for a delay can cause a denial of the bonus.

In order for a purchase to qualify for 5% cash back in this quarter’s rewards categories, the merchant must submit the charges to your credit card by the last day of the quarter.
