Physician here. have used Meet and Zoom in Europe that was HIPPA compliant within the last year. I use IPVanish for a VPN, having ditched Witopia. Hotel wifi should be fast enough even with a VPN.

For zoom, that was partly to avoid sanctions. Zoom was storing a huge amount of information in China. The concern was that the meetings/recordings could be accessed by the chinese government and considering that the data (initially) wasn't encrypted, private discussions would be compromised. That's why many tech companies have different rules for China (and presumably soon if not already) Russia. India is also moving towards that as well. All under the the guise of national security/privacy.

Google isn't as saintly either. Some of their practices are just as shady... The metadata they collect is just as valuable. Otherwise, why would they store so much of it. Case in point. I cleared my browser cache for my tablet about a week ago (give or take a day)... A quick check and I've found that google has nearly 500mb of cookie data. This is a regular occurrence with them (I have seen up to 2gb in the past). With the proper tools, imagine how much data could be extracted from there.

I host a weekly meeting with Google Meet and we regularly have people join from Canada, Belgium, Netherlands, UK, Germany and even Czechia.
I was in Prague for a couple of weeks and I had someone else host the meeting. I was able to join from Prague with no issues.

Finally, I have zero doubt that my medical records are hosted, reviewed and accessible in any number of data sites/call centres around the globe and that somewhere, I've tacitly consented to that when I scrawled my signature across a dozen+ forms upon arrival at a physician's office or hospital ER.
