You could ask that question on the Singapore Forum and I'm sure you will get plenty of contemporary advice...
Had a good feed in Singapore a year ago at the Chilli Crab FT DO, but perhaps Gelang not the best 'fine dining area'.
I've done something like that at one of the "CHIJMES" restaurants (4 Years ago) but, while the dining was 'white linin' fine and the evening was quite the romantic one, 'twas rather exe ... I thought for the price Raffles may have been a better and more interesting option.

If you really want fine dinning and like CHINESE food (I mean REAL chinese food, none of this (edited) Australian, Sydnye Golden Century (edited)) then try out the Four Seasons and Ritz Carlton Chinese restaurant.
The food is devine (unline ANYTHING in Aust) and the setting and atmosphere is excellent (and u can avoid the hawker centre mere mortals like us there!)

Agreed - I'll move this to the friendly SK forum.

re: GEYLANG RD.
I was there twice in the last 3 months. I need to tell ya I know the places are inexpensive and probably have good food.
HOWEVER...I did see a rat run across those alleys into one of th
e buildings that serves food... that was unsettling...and I saw food preperation done almost on the sidewalk standing over a bowl while socializing with customers...
I'll stick to the Hawker Food at Harbor and Raffle's Shopping Malls. Just not going to chance it. I didn't eat on Geylang..I did stay there a few nights while slumming it after the Valley Wing.
I do like contrasts...when traveling.
