Had an outstanding meal (ambience, service, food, decor, the whole bit) at Taste/Paradise, 48/49 Mosque Street in Chinatown, last August. This ain't just a visitor speaking: we were taken by two locals who had been there before more than once. If it's still open and under the same management it has my recommendation. (It's been six months, these things can change, but since I'll be back in late May I hope they haven't.)

And after all the Asian food, if you get a hankering for a good piece of cow flesh, try the Long Bar Steakhouse at The Raffles Hotel.

Also, the Courtyard at The Raffles is also good (and expensive) if you like some outdoor dining with dancing to a live band on most nights.
