I took three knives to the Sur la Table in Carlsbad, CA. The manager said he'd do them personally on the spot--and he did. He seemed to do a good, careful job with good equipment--and he explained while he did them why he used that particular sharpening system instead of another one. He also gave me some good advice about knives and also pepper grinders. He was experienced and really knew what he was talking about. The knives (which I haven't had sharpened in many years) are nice and sharp. I'm happy. (Although I had just grabbed the knives out of my drawer and hadn't bothered to wrap them up, and I did feel a little conspicuous walking through the parking lot to the store with three large knives in my hand. Good thing it wasn't an airplane.)
