Partially checking bags
I have an upcoming DXB-LHR-JFK flight on VS. I want to buy a friend of mine in the States a bottle of vodka from London as a gag gift (Sainsbury's Basics). My bag is small enough to be a carry on, so I was wondering if it'd be ok to carry it on DXB-LHR, buy the bottle in London (5 hour layover), then check it at Heathrow for the JFK leg with the liquid inside?

I believe the rule depends on the carrier, but most allow you to add an additional checked bag en route as long as you haven't exceeded the limit, which it sounds like you haven't.
I do not know of any carriers that will let you short-check a bag to a destination short of your final one unless there is an extended layover (12-24 hours, depending on the carrier and city).

I am not an expert, but I believe that as with any situation, you can successfully argue that the airline short-check your bag if your layover will give you enough time to retrieve it & recheck it within the stated minimum time (as in, if you have a 3 hour layover in an airport that accepts bags up to 30 minutes before departure).
