From that thread is a review I did of Uncle Bubs

Ate at Uncle Bub's BBQ today, 132 South Cass Avenue, Westmont, IL.
Phone: 630.493.9000 open Mon-Sat 11am-9pm, Sun 12noon-9pm.

Had the usual(for me) holy BBQ trio of sliced Beef, hot link, and pulled pork.

The link was the best I have had ANYWHERE. The menu states it is homemade.
The texture was firm; it was very lean w/o much fat and with a good spice kick.
VERY GOOD!!!

Pulled pork was more of a shredded pork. Decent smoke flavor (would have like to taste
More), but it would make a great sandwich.

The sliced beef was not brisket, I believe it was a roast (horrors!!!) and sliced very very thin, almost shaved. It had no flavor and was very disappointing.

While the meat items came w/sauce on them. I would recommend asking for no sauce added to your plate. There are two BBQ sauces to choose from at your table. A regular and spicy. These sauces have a lot of molasses taste to them. I preferred the spicy.

My usual sides of coleslaw and potato salad were fine; I give the nod to the potato salad.

Uncle Bub's serves ribs as well. It is the only BBQ joint I know of that serves them by market price (like most lobster dishes I see).

That reminds me that I need to go try their links one evening. Hot links are my favorite, BBQ and sausage, what could be better?

no problem, I've found that when searching on Flyertalk, choosing a SINGLE unique word from the item I'm searching for works best, fyi.

I went last night and I have to say I was sorely dissappointed. I had the brisket dinner (against the advice of Sweet Willy) with burnt ends. I also ordered rip tips as an appetizer. The rib tips were the best part of the meal, leading me to believe that ribs are what they focus on.

Using a 1 - 10 scale, with 10 being Central Texas BBQ in Houston's brisket, I would give this a 1. The meat was dry, and I don't even think it was the right cut. It was chopped and not sliced, and the sauce lacked a certain tanginess that I usually find in Texas sauces.

The burnt ends did not seem to be burnt ends at all, rather brisket cooked in butter just before being slathered in BBQ sauce. This was not pleasant at all. By far, the burnt ends at Fiorella's Jack Stack BBQ in Kansas City are better--actually burnt ends of a real brisket.

This place shows promise if I am home in Chicago and have a hankerin' for ribs, but I think that about all I will go back for.

you are correct it is not the correct cut of meat for Texas style BBQ, where the brisket is king. I think Bub's uses a top round or other poor choice of meat for the process that true BBQ goes through. Most in Chicago have never had true Texas BBQ so as a result any beef cut w/BBQ sauce is called BBQ which as you know is NOT true BBQ. The sauce is almost always a second thought in true Texas BBQ, it is all about the meat itself.
