you are correct it is not the correct cut of meat for Texas style BBQ, where the brisket is king. I think Bub's uses a top round or other poor choice of meat for the process that true BBQ goes through. Most in Chicago have never had true Texas BBQ so as a result any beef cut w/BBQ sauce is called BBQ which as you know is NOT true BBQ. The sauce is almost always a second thought in true Texas BBQ, it is all about the meat itself.
