Legacy to New Travel Package Conversion (effective August 2019)
A Marriott supervisor can currently convert your legacy travel package into the new category mapping. If you hold a Category 6, 8, or Tier 1-3 legacy certificate, it's ideal to downgrade your certificate before converting so that points don't potentially get lost in the process.
The codes for the new partial packages are:
New Cat 1-4: QP83
New Cat 5: QP91
New Cat 6: QP99
New Cat 7:
The legacy certificates map to the new certificates as such:
Cat 1-5 => Cat 1-4
Cat 6 => Cat 1-4
Cat 7 => Cat 5
Cat 8 => Cat 5
Cat 9 => Cat 6
Tier 1-3 => Cat 6
Tier 4-5 => Cat 7
==================================================
If you are unsure where you will use your 7 night stay, when you request the package, just ask for a category 1-5 hotel. That way you are out of the least number of points. If later, you decide to book for a higher level category, then you can do so and pay the difference the travel package points. If you can't use your certificate within the year, then as close to the one year anniversary (without going over!) call to extend the certificate for one more year. That's as long as they will typically allow, one extension. There is an option to expedite the mileage delivery to within three business days (sometimes faster) for $15. There are reports that this fee may be waived for platinum members.
Effective April 1 2017 re: Southwest & the companion pass:
"Purchased points, points converted from hotel and car loyalty programs, and e-Rewards, e-Miles, Valued Opinions and Diners Club, points earned from Rapid Rewards program enrollment, tier bonuses, flight bonuses, and partner bonuses (excluding points bonuses earned on the Rapid Rewards Credit Cards from Chase) do not count toward Companion Pass."

A tad off topic here, but when you stayed at the Shelbourne, did you find the concierge(s) to be extremely unfamiliar with the city? It was an issue I had when I stayed there...they couldn't even provide basic walking directions to major places without consulting Google maps (which I can do just as easily from my phone). Just a pet peeve, I suppose. Clearly not Dubliners.

Thanks for all of the responses. I am interested in looking into Ireland. Maybe book the 7 nights at the Shelbourne but stay at B&B's a few nights in other parts (Dingle or Galway, etc)? I would really like to see the countryside. Would that be doable? We would obviously need to rent a car.

I'd use my own money for Ireland and use the certificate for London or Paris where there are easily a weeks worth of things to see from one base.

How about Munich
I took 4 of us to Munich last May and had a great time for a week. Plenty of people in the country speak English. Lot's to see in the city and on easy day trips by train. Subway is easy to navigate and if you don't know which ticket to buy ask at a food kiosk. I even know a local tour guide if you are interested.

Do all 7 days need to be used at a single hotel consecutively, or can certs be used to book individual stays?

Per Marriott T&C, the nights must be consecutive at the same hotel

I will second the Munich suggestion. We stayed at the Courtyard there in May. Almost everyone speaks enough english and we found the people there to be very helpful and friendly. Spent a couple of days in Munich and several days 1-2 hours away touring the castles, neighboring towns, etc. We rented a car and found that driving was as easy as driving in the midwest. We purchased a GPS with European maps and it worked great.
A couple of must sees-- Neuschwantsein Castle near Fussen, Germany and Halstatt, Austria. You can google Halstatt. One of the most picturesque places I've ever seen.

Is there any way to change a 7-night package into a 5-night package and get points returned?

It's still unclear whether the 5-night TP is actually available to non-MVCI owners. One of the bloggers says it is; Marriott does not appear to have confirmed this. In the other thread about it, there's 1 report of a success (from the blogger) and 1 report of a fail (from an FTer).
My hunch: the blogger got lucky. In any case, the jury is still out on this one...
